Mini Badusha ( Without Curd) / Balushahi



Ingredients

Maida                                : 2 cups
Ghee                                  : 1/4 cup
Baking soda                      : a pinch
Salt                                    : a pinch
Sugar                                 : 1 cup
Water                                 : 3/4 cup
Cardamom powder            : 1/4 tsp
Oil


Method

Mix the flour , soda, salt and ghee well.
Add 1 tbsp water and knead well until you get a smooth & soft dough .
Keep aside for 30 minutes.
Divide the dough into 8 to 10 equal portions and shape into small balls.
Make a slight dent in the center of the ball .
Heat oil ,reduce the flame,deep fry the balls on very low heat.
Allow it to cool.
Mix sugar and water and bring it to boil.
As soon as you get it to a one string consistency, drop the fried badushas into the sugar syrup,leave it for 2 minutes and remove it.
Cool completely and store it in an air tight container.
Serve & Enjoy.


Basundhi / How to make Basundhi



Ingredients 

Full cream Milk                         : 1/2 ltr
Sugar                                          : 2 tbsps
Saffron                                        : 1 pinch
Almonds                                     : 1 tbsp
Cashews                                     : 1 tbsp

Method

Put the milk in a heavy bottomed pan.
Boil it
Take 1 tbsp milk in a cup , add saffron & keep aside.
Boil the milk for 5 minutes.
Add sugar, chopped almonds, chopped cashews, soaked saffron , mix well.
Reduce the flame ,  let the milk thicken
Keep stirring in between.
Boil for few more minutes or till milk thickens completely.
Remove from flame .
Serve chilled .
Enjoy 


Easy & Quick Corn Pulao - Lunch Ideas



Ingredients

Cooked Basmati Rice                                 : 1 cup
Boiled Sweet corn                                      : 3/4 cup
Chopped Onion                                          : 1/4 cup
Ginger & Garlic paste                                : 1/2 tsp
Cumin seeds                                               : 1/2 tsp
Cloves                                                         : 4 -5
Cinnamon                                                    : 2 sticks
Cardamom                                                   : 2 nos
Bay leaves                                                    : 2
Salt                                                               : as needed
Ghee                                                            : 1 to  1&1/2 tbsps 
Corinder leaves                                           : few
Mint leaves                                                 : few

Method

Wash , & soak basmati rice for 10 minutes and cook with little salt .
Cook the sweet corn with little salt for 5 minutes or until tender.
Heat ghee in a pan, add bay leaves, cloves, cardamom , cinnamon , cumin seeds one by one and fry.
Add chopped onion now and fry.
Add ginger & garlic paste and mix.
Now add the corn and mix well.
Let it cook for few minutes.
Now add the boiled rice , mix everything well.
Add coriander leaves , mint leaves , mix , cover the pan and cook on low flame .
Remove from flame and serve hot..


Tomato Rasam Without Dal / Easy Tomato Rasam



Ingredients

Tomato                    : 2 nos
Whole Pepper         : 1 tsp
Cumin seeds           : 1 tsp + 1 tbp
Red chilly               :2
Mustard seeds        : 1/2 tsp
Ghee                      : 1/2 tsp
Curry leaves          : few
Coriander leaves    : few

Salt                         : as needed 

Method

Grind tomato , pepper, cumin seeds , grind to a smooth paste.
Add 1/2 cup water to the tomato mixture ,add salt and let it boil for 3-4 minutes.
Add 1/2 cup water again , put coriander leaves, curry leaves , mix and let it boil on low flame till  frothy.
Remove from flame and cover with a lid.
In a small pan ,add ghee , splutter mustard seeds, cumin seeds, red chilly and pour it to the rasam.
Mix & serve hot.

Chana Sundal / கொண்டைக்கடலை சுண்டல் - Navarathri Recipes





Ingredients

White Chana                   : 1 cup
Grated Coconut               : 1/4 cup
Red chillies                      : 2
Curry leaves                     : few
Mustard seeds                   : 1 tsp
Urad dal                            : 1 tsp
Asafoetida                         : 1/4 tsp
Oil                                      : 1 tbsp
Salt                                     : to taste 




Method

Wash & soak Chana overnight.
Pressure cook it with little salt for 5 whistles.
Heat oil in a kadai,add mustard seeds, urad dal .
When mustard start to crackle,add Red chillies , curry leaves, and asafoetida.
Now add cooked Chana ,salt, mix well , cover & cook for 3-4 minutes.
Finally add grated coconut and stir for few minutes.

Paasi Payaru Sweet Sundal / Sweet Sundal / பாசிபயறு வெல்ல சுண்டல் - Navarathri Recipes



Ingredients

Green moong dal                 : 1 cup
Jaggery                                : 1/2 cup
Grated Coconut                   : 2 tbsps
Cardamom powder              : 1/4 tsp
Water                                   : 1/2 cup


Method

Soak gree nmoong dal  in water for 5 hours , pressure cook for 5 whistles .
Take a pan , add water , jaggery and let it boil.
Remove from flame , strain & boil again for 2 minutes.
Add cooked dal and mix well
Add grated coconut now , let it cook till the jaggery water gets incorporated well with the sundal.
Add cardamom powder , mix and remove from flame.
Serve..



Rava Pongal - Method (2) / ரவா பொங்கல்



Ingredients 


Roasted Rava : 1/2 cup 
Water : 1& 1/2 cups 
Moong dal : 1/4 cup 
Pepper : 1/2 tsp 
Jeera : 1/2 tsp 
Ginger : 1/4 tsp 
Curry leaves : few 
Ghee : 5 tbsp Salt : as needed 
Asafotida : a pinch 

Method 

Cook moong dal in a pressure cooker until it becomes soft. 
In a kadai , add ghee , put cumin seeds, whole pepper , ginger , cashews, curry leaves ,asafoetida and fry. 
Add 1/2 cups water , salt and bring to boil. 
Add roaster rava , reduce the flame and cook. 
Cook for 5 minutes or until rava gets cooked soft. 
Add little ghee if needed. 
Serve hot with coconut chutney.

How to Make Cardamom & Ginger Tea - For Beginners



Ingredients

Tea                                    : 1 tsp ( I use Taj Mahal tea)
Milk                                   : 1 cup
Water                                  : 1 cup
Sugar                                : 1 tsp
Crushed cardamom          : 1/4 tsp
Grated ginger                   : 1/4 tsp

Method

Heat a pan , add milk and water .
Let it boil.
Add tea powder, Sugar , cardamom , ginger , mix well and let it boil on low flame for 3 - 4 minutes or until you get a good colour.
Switch off the flame and close with a lid for few seconds.
Filter it.

Quick Green peas & Corn Curry - Side dish for Roti / Chapathi





Ingredients

Green peas                        : 1/2 cup
Sweet corn                        : 1/2 cup
Chopped onion                 : 1 cup
Chopped tomato               : 1 cup
Ginger                               : a small piece
Garlic                                : 3
Green chilly                      :1
Sugar                                 : 1/2 tsp
Red chilli powder             : 1/2 tsp
Turmeric powder              : 1/2 tsp
Garam masala powder     : 1/4 tsp
Kasuri methi                     : 1/4 tsp
Salt                                    : as needed
Oil                                     : 1 & 1/2 tbsp

Method

Soak cashews in warm water for 1/2 an hour, grind it to a smooth paste and keep aside.
Heat oil in a pan , add chopped onion and fry.
Add chopped ginger , garlic & green chilly.
Remove from fire and let it cool.
Add chopped tomatoes to it  and grind to a smooth paste.
Transfer to the pan , add 1/4 cup water , lower the flame and let it boil.
Add salt, Turmeric powder, red chilly powder, sugar to it and mix.
Add cashew paste now and let it boil for some time.
Add garam masala powder , kasuri methi and mix well.
Cover & cook for 2 minutes.
Switch off the flame.
Serve hot..

Hung Curd Sandwich / Dahi Sandwich



Ingredients


Yogurt / Dahi                             ; 1/2 cup
Sandwich Bread slices               : 2
BoiledSweet corn                       : 1/4 cup
Grated carrot                               : 1/4 cup
Chilli flakes                                : 1/4 tsp
Salt                                             : as required

Method

Pour the yogurt in a muslin cloth , tie the edges and hang it over the kitchen sink for 3 hours.
In a bowl , add sweet corn , grated carrot , red chilly flakes, salt and mix well.
Add hung curd to it and mix.
Cut the corner sides of the bread , cut half , apply a layer of the mixture on bread , cover with another slice of bread and press gently.

How to make Cabbage Peas Poriyal / Cabbage Stir fry - Vegetarian Recipes



Ingredients 

Cabbage : 1 cup 
Green peas : 1/4 cup 
Grated coconut : 2 tbsp 
Oil : 1 tsp 
Mustard seeds 
Urad dal 
Red chilly 1 
Curry leaves 
Salt 

Method

Heat oil in a pan, season with 1 tsp mustard, 1 tsp urad dal,1 red chilly and curry leaves. 
Add chopped cabbage , green peas and mix well. 
Add salt and little water. When cabbage & peas cooked well add 1 tbsp coconut. 
Mix everything well 
Remove from flame and keep aside .

Carrot Halwa / Gajar Ka Halwa / கேரட் அல்வா



Ingredients

Grated Carrot                      : 1cup
Sugar                                   ; 3/4 cup
Milk                                     : 1& 1/4 cup
Ghee                                      : 1 1/2 tbsp
Cashewnuts                          : 2 tbsp
Raisins                                  : 2 tbsps

Method

Heat ghee in a pan , fry cashewnuts , raisins and keep aside.
In the same pan , add the grated carrot and fry for a minute.
Add milk and mix.
Let it boil .
Stir in between & let it cook on low flame ubtil all the milk is absorbed.
Add sugar , mix and let it cook again.
Keep stirring continuously & cook for 15 - 20 minutes.
Add the fired cahews - raisins , mix and remove from flame
Serve Hot

Idli Manchurian - leftover Idli recipe



Ingredients


Leftover idlies                 : 10 nos
Spring Onion                 : 1/2 bunch
Tomato sauce                  : 1 tsp
Chilly sauce                     : 1 tsp
Soya sauce                       : 1 tsp
Chopped Garlic                : 1 1/2 tbsp
Green Chilly                     : 2 nos
Capsicum                          : 1
Oil
Salt

Method

Cut the idlies into 4 pieces.
Fry the idli pieces one by one, sprinkle little salt ,  deep fry and keep aside.
Heat 2 tbsp oil in a frying pan, add chopped garlic and fry.
Add chopped green chilly, white part of the spring onion and fry.
Add soya sauce, chilly sauce, tomato sauce, chopped capsicum and fried idlies.
Lastly add salt and chopped spring onion, mix and fry on a high flame for few minutes and remove from fire.
Serve hot & enjoy..


Adai recipe / அடை




Ingredients


Idli Rice                       - 1 cup

Raw rice                       - 1/4 cup
Toor dal                        - 1/2 cup
Channa dal                   - 1/2 cup
Red chillies                   - 5
Salt
Curry leaves
Asafoetida
Oil

Method

Wash and rice and dals togetherand grind together coarsely with salt and red chillies.
Add curry leaves,asafoetida and mix everything well.
Heat dosa tawa, pour 1 ladle of batter ,  spread as round and make holes
Put oil on sides and cook both sides till crispy.
Serve hot with coconut chutney , jaggery & Idli podi... 



Quick Arisi Upma / அரிசி உப்புமா செய்யும் முறை / Broken Rice Upma



Ingredients

Raw rice                                        : 1 cup
Toor dal                                         : 1 tbsp
Black Pepper                                 :  1/4 tsp
Grated coconut                              : 1/2 cup
Red chilly                                      : 3 
Asafoetida                                      : a pinch
Curry leaves                                   : few
Water                                              : 2 &1/2 cup
Mustard seeds                                : 1 tsp
Urad dal                                         : 1 tsp
Salt
oil

Method

Add raw rice , toor dal , black pepper in a blender and grind it for few seconds. ( coarsly grind)
Transfer, sprinkle some water on it and keep aside.
In a Vengala paanai ( Bronze pot - Traditional cooking vessel) , heat 2 tbsps oil , temper with mustard seeds.urad dal , red chilly , curry leaves ,asafoetida , grated coconut one by one.
Add water,salt and let it boil.
When water just comes to a boil,put the rice mixture and,mix well ,lower the flame.
Close with a lid and let it cook on low flame.
This takes under 10 minutes to cook .
Once the water is absorbed and the rice rava is cooked , switch off the flame and let it sit for few more minutes.
Serve hot with Sambar & Coconut Chutney...

How to make Kozhukattai Maavu / Kozhukattai Maavu preparation

Ingredients

Raw Rice : 1 cup
Oil
Salt


Method

                                                         Wash & Soak rice in water for 1 hour.


                                                                        Drain the rice 


                                                  and spread it in a clean cloth for 10 minutes.


                                                                 Grind the rice to a fine powder.


                                                                  Sieve twice and keep aside.


                                                                       Boil 3/4 cup water in a pan 

                                                                   
                                                                              with little salt 



                                                                          & 1/2 tsp oil.


                                                                When the water starts to boil



                                                             add 1 cup rice flour,


                                                                 mix well and remove from fire.


                                                       Knead it well and cover with a wet cloth



                                                         Knead it again - Smooth & soft dough 


                                                                  make lemon sized balls


                                                          Make a cup of it with your fingers , 


                                                                               like this



Place any pooranam inside this cup and steam cook.
