Vegetable Biryani ( Method 2)

Ingredients

Jeerakasamba Rice                         - 1 cup ( 200gms)
Mixed vegetables                            - 1 cup( carrot, beans, Green peas, potato, )
Onion                                             - 2
Shallots                                          - 5 

Tomato                                           - 1 ( big)
Ginger-garlic paste                       - 1 tbsp
Green chillies                                - 4
Fresh Brinji leaves / Rambai Ilai - 1 ( click here for details)
Cinnamon                                   - 2
Cardamom                                  - 2
Cloves                                         - 2
Ghee                                            - 2 tbsps
Oil                                               - 1 tbsp
Salt                         
Coriander leaves                        - 3 tbsps
Mint leaves                                - 3 tbsps



Method

Wash & soak rice for 1//2 an hour
Chop the vegetables .
Grind tomatoes separately.
Grind shallots ,1/2 of the  coriander leaves, 1/2 of the mint leaves and 2 green chillies & ginger - garlic paste.
Heat ghee in a pressure cooker ,put fresh brinji leves ,cinnamon,cardamom,cloves, chopped onion, ground paste , salt in this order and saute well.
Now add tomato juice,soaked rice and mix well.
Add the remaining coriander leaves  mint leaves & 1 tsp ghee & mix well.
Close the lid,wait for 1 whistle and switch off the flame.
Immediately release the pressure from the cooker by lifting the whistle weight carefully & open slowly..
Mix well & Serve with any raita.
Enjoy..


Simple Cabbage Rice

Ingredients

Finely Chopped Cabbage                : 1 cup
Chopped onion                                : 12 cup
Cooked rice                                     : 1 cup
Oil                                                    : 2 tbsps
Mustard seeds                                  : 1/2 tsp
Urad dal                                           : 1/2 tsp
Chana dal                                         : 1/2 tsp
Salt



Method

Heat oil in a kadai , splutter mustard seeds , urad dal , chana dal .
Add chopped onion and fry till onions turn translucent.
Add finely chopped cabbage and saute for few minutes.
Add turmeric powder , salt , mix well .
Now add red chilli powder , mix , cover with a lid & cook for 2 - 3 minutes .
Now add cooked rice , mix well ,cover , lower the flame & let it cook for few more minutes.
Remove from flame and serve hot with Potato chips.






Easy & Quick Corn Pulao - Lunch Ideas



Ingredients

Cooked Basmati Rice                                 : 1 cup
Boiled Sweet corn                                      : 3/4 cup
Chopped Onion                                          : 1/4 cup
Ginger & Garlic paste                                : 1/2 tsp
Cumin seeds                                               : 1/2 tsp
Cloves                                                         : 4 -5
Cinnamon                                                    : 2 sticks
Cardamom                                                   : 2 nos
Bay leaves                                                    : 2
Salt                                                               : as needed
Ghee                                                            : 1 to  1&1/2 tbsps 
Corinder leaves                                           : few
Mint leaves                                                 : few

Method

Wash , & soak basmati rice for 10 minutes and cook with little salt .
Cook the sweet corn with little salt for 5 minutes or until tender.
Heat ghee in a pan, add bay leaves, cloves, cardamom , cinnamon , cumin seeds one by one and fry.
Add chopped onion now and fry.
Add ginger & garlic paste and mix.
Now add the corn and mix well.
Let it cook for few minutes.
Now add the boiled rice , mix everything well.
Add coriander leaves , mint leaves , mix , cover the pan and cook on low flame .
Remove from flame and serve hot..

Keerai Sadam / கீரை சாதம்



Ingredients

Raw rice            : 1 cup
Toor dal             : 1/2 cup
Spinach              : 1 cup ( washed and chopped )
Sambar powder  : 1 1/2 tbsp
Small onion        : 10 nos
Tomato               ; 2
Tamarind water  : 1/2 cup
Mustard seeds
Salt
Oil


Method

Wash and soak rice and dal for 10 minutes .
Heat oil in a pressure cooker , splutter mustard seeds.
Add onion , tomato and fry.
Next add the chopped spinach , sambar powder , salt and mix well.
Add tamarind water and mix.
Add rice ,dal , 3 cups water , mix and pressure cook for 4 whistles.
Let it cool , mix well and serve hot.
Enjoy with potato chips


Samba Sadam / சம்பா சாதம்



Ingredients

Cooked raw rice               : 1 cup
Pepper                              : 1 1/2 tbsp 
Cumin seeds                     : 2tbsps
Ghee                                 ; 2 tbsps
Fried cashewnut
Salt


Method

Dry roast pepper and cumin seeds for few minutes and let it cool.
Powder them coarsely with salt.
Add ghee , pepper powder, cashewnut to the rice.
Serve with Kathirikai gothsu.

Easy & Quick Vegetable pulao



Ingredients

Cooked basmati rice            : 1 1/2 cups
Carrot                                   : 1 
Beans                                    : 10 nos 
Onion                                    : 1
Capsicum                              : 1
Green chillies                        : 3
Cloves                                    : 3
Cardamom                             : 2
Chopped ginger                     : 1/4 tsp
Cinnamon                              : 1 piece
Mint leaves
Salt
Ghee


Method

Chop the onion
Chop carrot , beans, capsicum into small pieces.
Heat ghee in a pan , add  cinnamon , cardamom, cloves, chopped green chillies, ginger and fry.
Add chopped onion and fry for 3 - 4 minutes or until the onions turn a medium brown colour.
Add the chopped vegetables , salt and mix everything well.
Cook on low flame until the vegetables turn tender and cooked.
Add the cooked rice , mint leaves and mix gently.
Remove from flame and serve hot.



Mint & Coriander Rice - Aadi 18 special



Ingredients

Cooked rice               : 1 cup
Mint  leaves         : 1 cup
Coriander leaves  : 1 cup
Green chillies       : 2
Grated ginger       : a pinch
Lemon juice         ; 1/4 tsp 
Cumin seeds         : 1/4 tsp
Salt
Ghee                    



Method

Grind mint leaves , coriander leaves , lemon juice, green chillies ginger to a smooth paste.
Heat ghee in a pan, fry cumin seeds.
Add the paste to the pan , reduce the flame, add required salt , and mix well.
Cook the paste till the ghee separates.
Remove from flame.
Now add the cooked rice to it and mix well.
Add little ghee / gingelly oil , mix gently .
Let it sit for 1/2 an hour and serve.
Enjoy 

Vaangi bath / Brinjal rice / கத்திரிக்காய் சாதம் (அ) வாங்கி பாத்



Ingredients

Cooked rice                : 1 cup
Brinjal                         : 3 nos
Chopped onion           : 2tbsps 
Turmeric powder
Curry leaves
Salt
Oil

Ingredients for vaangi bath powder

Chana dal             : 1 tsp
Urad dal               : 1 tsp
Coriander seeds    : 1/2 tsp
Dry coconut grated   ; 1 tbsp
Cinnamon stick         : small stick
Cloves                      : 2 nos
Red chillies               : 4

Heat 1/2 tsp oil in a kadai  , add urad dal , chana dal , fry until they turn red in colour , remove and keep aside.
Add rec chillies , coriander seeds , fry and keep aside.
Fry cinnamon stick, cloves and keep aside.
Let the ingredients cool completely.
Grind the ingredients with dry coconut to a coarse powder.


Method

Wash the brinjals , chop them and soak on salted water.
Heat oil in a pan , add brinjals, salt ,turmeric powder , reduce the flame , let it cook completely and get roasted .
Remove from flame and keep aside.
Heat 1 tsp oil in the same pan , add cumin seeds and fry.
Add chopped onion,curry leaves and fry .
Now add the roasted brinjal, cooked rice , salt and mix well.
Add the vaangibath powder now , mix everything well.
Let it cook for few minutes and r emove from flame.
Serve with any raita.

Cabbage Black pepper Rice / Pulao



Ingredients

Cooked rice                  : 2 cups
Shredded cabbage        : 1 cup
Chopped Garlic            : 1 tbsp
Crushed pepper corns  : 1 tsp
Salt
Oil


Method

Heat 1 tbsp oil in a pan , add chopped garlic and fry.
Add cabbage , salt and mix.
Fry cabbage for 5 minutes on medium flame.
Add cooked rice and toss.
add crushed peppercorns, toss again and cook for few more minutes.
Finally add coriander leaves, mix and remove from flame.
Serve hot.


No onion No Garlic Vegetable pulao



Ingredients

Rice               : 1 cup 
Coconut milk  : 1/2 cup
Water              : 1/2 cup
Chopped carrot  : 1/4 cup
Green peas         : 1 tbsp
Chopped capsicum  : 1/4 cup
Chopped ginger       : 1/4 tsp
Shahi jeera               : 1 /4 tsp
Bay leaf                    :  1
Cardamom                : 2
Green chilly             : 3
Coriander leaves
Mint leaves
Oil
Ghee
Salt


Method

Wash and soak rice in 1/2 cup water and 1/2 cup coconut milk mixture for 1/2 an hour.
Heat 1 tsp oil + 1 tsp ghee in a heavy bottomed pan , add shahi jeera , bay leaf, cardamom and fry.
Add green chilly, chopped ginger and fry.
Add carrot, green peas  , mix.
Now add the rice along with the water , coconut milk mixture in which it was soaked.
Add required salt and mix everything well.
Cook on medium  flame until the rice absorbs the water.
Reduce the flame , add chopped capsicum, coriander leaves, mint leaves , mix , cover with a lid and cook till done.
Switch off the flame and let it rest for few more minutes.
Serve hot with any side side dish of your choice.



Rajma / Red kidney beans Pulao / Pilaf / Pulav



Ingredients

Cooked rice : 1 cup
Cooked rajma  : 1/2 cup ( overnight soaked & cooked with little salt)
Chopped onion : 2 tbsps
Green chilly : 2 nos
Red chilly powder : 1/2 tsp
Ginger - Garlic paste : 1 tsp
Garam masala powder : 1/2 tsp
Cumin seeds : 1 tsp
Salt
Oil
Coriander leaves 



Method

Heat oil in a kadai, add cumin seeds.
Add chopped green chillies,onion,ginger-garlic paste and fry.
Add the cooked rajma now and stir.
Add salt and mix and let it cook for few minutes.
Put garam masala powder,red chilly powder and stir.
Add cooked and cooled rice now and mix gently.
Cover and cook for few minutes.
Garnish with coriander leaves and serve with any raita.



Quick Vegetable Rice



Ingredients

Basmati Rice              : 1 cup
Chopped  onion  ; 1/2 cup
Chopped carrot   : 1/2 cup
Green peas / Butter beans ; 1/4 cup
Tomato puree                    : 1/4 cup
Chopped beans                  : 1/4 cup
Chopped capsicum            : 1/4 cup
Ginger - Garlic paste         : 1/2 tsp
Red chilly powder             : 1/4 tsp
Salt                                     : to taste
Coriander leaves 



Method

Wash and soak the rice with 1 and 1/2 cup water  for 10 minutes .
Heat 2 tbsp oil in a heavy bottomed pan, add onion, ginger garlic paste and fry.
Add chopped carrot,beans,butter beans and cook for few minutes on low flame.
Add salt,red chilly powder, tomato puree, and fry.
Add the soaked rice with the water, capsicum ,mix well ,cover the pan with a lid and cook on low flame till done.
Finally add  coriander leaves and mix .
Serve hot.




Aadi 18 / Aadi perukku special recipes

Karuveppilai sadam / Curry leaves rice - Aadi perukku recipes



Ingredients

Cooked rice        : 1 cup
Curry leaves : 2 cups
Black pepper : 2 tsps
Toordal : 2 tbsps
Urad dal : 2 tbsps
Red chillies : 5 nos
Salt


To temper 

Mustard seeds   : 1/2 tsp
Urad dal            : 1tsp
Red chilly         : 1
Cashewnuts      : few

Method

Spread the cooked rice  in a wide plate with 1 tsp of sesame oil and keep aside.
Wash and dry the curry leaves for 1/2 an hour.
Dry roast toor dal,urad dal , pepper separately until they turn golden brown and let it cool.
Dry roast red chillies on low flame and keep aside.
You can dry roast curry leaves in a kadhai, or in microwave oven till crisp & allow it to cool.
First grind the dal,pepper , then add curry leaves ,salt .
Grind it to a smooth powder.

Temper the items given under "to temper ' table and add it to the rice.
Add the powdered curry leaves powder and mix well.
Serve ..







Cabbage Capsicum Tawa Pulao - Quick & easy rice recipe



Ingredients

Cooked rice      : 1 cup
Chopped cabbage   : 1/4 cup
Chopped capsicum  : 1/4 cup
Chopped onion        : 2 tbsps 
Chopped tomato      : 1 tbsp
Ginger - Garlic paste  : 1/4 tsp
Pav bhaji masala        : 1 tbsp
Cumin seeds              :1 /4 tsp
Oil                              : 1 1/2 tbsp
Lemon juice               : 1/2 tsp
Salt
Coriander leaves 


Method

Heat oil in a pan, add cumin seeds and saute.
Add onion and fry till light brown.
Add tomato,ginger garlic paste and fry for few minutes.
Add chopped cabbage,salt ,pav bhaji masala ,mix everything well and cook for 3 to 4 minutes.
Add cooked rice,capsicum,coriander leaves,lemon juice and mix well.
Cook on high flame for few minutes and switch off the flame.
Serve hot .
