Dharwad peda
Ingredients
Full cream milk : 1 ltre
Lemon juice : 1 tsp
Sugar : 1/2 cup
Ghee : 2 tsp
Milk : 1 tsp
Powdered sugar : 3 tsps for dusting the peda
Cardamom powder : a pinch
Method
Boil milk & simmer for few minutes.
Add lemon juice to it and keep stirring until the whey completely separates.
Switch off the fire.
Place a fine cloth over a container and strain it.
Tie the cloth & hang it to a sink tap for 1 hour to let the whey completely drain out.Heat a non stick pan, add the khoya & 1 tsp ghee to it and mix well & let it cook on medium flame until golden brown.
Add sugar , 1 tsp milk & mix well & cook until golden brown on low flame.
Keep stirring continuously.
Add cardamom powder , remaining 1 tsp ghee and mix well.
Let it cook for few more minutes.
Now remove from flame & let the mixture cool down.
Knead into lemon sized balls.
Finally take powdered sugar in a plate , roll the peda balls in the sugar , coating them on all the sides .
Transfer it to a air tight container.
Serve & Enjoy :)
Panner Fudge With Just 2 Ingredients
Ingredients
Paneer : 1/2 cup ( Homemade Paneer Recipe Here )
Condensed milk : 1/4 cup + 1 tsp ( Homemade Condensed Milk Recipe Here)
Method
Knead paneer into a soft dough.
Combine the paneer, condensed milk and mix well.
Keep stirring the mixture over medium heat.
When the mixture begins to leave the side of the pan switch of the flame.
Allow it to cool.
Grease a plate with little ghee or butter.
Transfer the mixture into the grease plate and cut into pieces.
Using nuts or Saffron are optional.
Place in the fridge for 2 hours or freezer for few minutes.
Serve..

Paruppu Payasam with Palm Jaggery for Aadi Velli / ஆடி வெள்ளி / பருப்பு பாயசம் / பனை வெல்லம்
Ingredients
Moong dal : 1/2 cup
Chana dal : 1 tbsp
Palm Jaggery : 1/4 cup
Milk : 3/4 cup
Ghee : 1 tbsp
Cashew nuts : 1 tbsp
Cardamom powder : 1/2 tsp
Chopped coconut pieces : 1 tbsp
Method
Roast moong dal & chana dal with 1/2 tsp ghee until little brown.
In a pressure cooker add milk, 1/2 cup water and the roasted moong dal and cook upto 3 to 4 whistles.
Make a thick syrup with palm jaggery with little water.Add the cooked dal to the jaggery syrup, mix well add cardamom powder and let it boil on low flame for few minutes.
Remove from flame , fry cashewnuts and coconut pieces in the remaining ghee and add it to the payasam.
Mix well and serve hot.
Quick Chocolate Mousse - Dessert Recipes
Ingredients
Chocolate bars : 4 nos ( Grated )
Fresh cream : 1 cup
Sugar : 2 tbsps
Coffee powder : 1/4 tsp
Butter : 1/2 tsp
Vanilla Essense : few drops
Method
Melt the grated chocolate in Microwave for 1 1/2 - 2 minutes.
Pour the melted chocolate into a mixing bowl,add coffee powder,butter,vanilla essense and mix well.
Then add the fresh cream,sugar and whisk well.
Divide into four serving Cups / Glasses, sprinkle some grated chocolate on the top and allow to set in the Refrigerator for a couple of hours.
Serve Chilled and Enjoy for this Ramadan / Ramzan.....:)
Red Rice Payasam / Red rice Kheer / சிகப்பு அரிசி பாயசம் .
Ingredients
Red rice : 1/4 cup
Milk : 3 cups
Sugar : 3/4 cup
Cardamom powder
Saffron
Method
Soak saffron in little milk.
Fry rice in 1/4 tsp ghee and powder it to a coarse powder.
Boil milk in a heavy bottomed pan.
Once the milk comes to a boil,add the powdered rice,simmer the flame,cook till the rice is soft.
Stir in between to prevent sticking at the bottom.
The secret of its unique flavour is in the slow cooking.
Once the milk has been absorbed ,and the rice has become soft,add sugar and let it boil for few minutes.
Add saffron, cardamom and mix well.
Garnish with cashew nuts & raisins fried in ghee if desired.
Serve hot.
Fruit Salad with Condensed Milk
Ingredients
Homemade Condensed Milk : 1 cup ( Recipe Here)
Mixed Fruits : 1 1/2 cups ( i used Grapes,Banana,Apple,Pomegranate )
Method
Cut fruits into small bite sized pieces.
Add fruits in condensed milk and stir well.
Keep in refrigerator for an hour.
Serve..
Hot Gulab Jamun with Chilled Ice Cream - Classic Combo 4
Ingredients

Vanilla Ice cream : 2 Scoops
Chopped nuts
Method
Slightly squeeze out the syrup from the jamun and keep aside.
Take 2 scoops of vanilla ice cream in a serving bowl, put jamun on top of the ice cream.
Garnish with chopped nuts.

Masala Paal
Ingredients
Milk : 4 cups
Sugar : 1/2 cup
Soaked badam : 1/4 cup
Piyal seeds ( sara paruppu) : 2 tbsp
Cardamom powder : 1 tsp
Cinnamon : 1
Cloves : 3
Saffron : 1/4 tsp
Method
Soak saffron in little milk for 15 minutes.
In a wide heavy bottomed vessel,add milk,cinnamon,cardamom,cloves and boil till the milk is reduced to half the quantity.
Grind almonds in milk to a smooth paste.
To the boiling milk,add the almond paste,saffron milk,sugar and mix well.
Let it boil on low flame for few minutes.
Add the piyal seeds and switch off the fire.
Cool and serve.
Eggless chocolate Pudding

Ingredients
Corn flour : 3 tbsps
Cocoa powder : 3 tbsps
Sugar : 5 tbsps
Butter : 1 tbsp
Milk : 1 1/2 cups
Vanilla essence
Method
Mix milk,corn flour,cocoa powder,sugar together.
Heat the milk mixture, let simmer stirring continuously until thick and creamy for about 15 minutes.
Remove from fire, add butter,vanilla essence and mix.
Pour the mixture into individual serving bowls and let it cool to room temperature.
Refrigerate for 2 hours and serve chilled.

Mango Trifle Pudding
Ingredients
Mango puree : 2 cups
Strawberry Custard powder : 2 tbsps
Sponge cake : 1 ( cubes)
Chopped nuts : 3 tbsps
Method
Prepare custard as per the instructions in the pocket.
Take a Glass cup start layering the trifle.
Spread cake cubes on the bottom and press it firmly.
Pour strawberry custard over it.
Now add 1 tbsp of chopped nuts.
Then pour the mango puree and finally garnish with fried Almonds.
Refrigerate for 3 hrs and serve chilled..

Fried Ice Cream
Ingredients
Vanilla ice cream : 4 scoops
Bread : 8 slices
Oil
Method
Trim the crust of the bread .
Put one scoop of ice cream on a bread slice ,cover with another bread slice, roll it into a ball.
Once it's completely covered freeze it for 2 hours.
Heat oil in pan, drop the balls one at a time .
Fry them carefully for few minutes.
Serve immediately.
Enjoy ..

Ingredients
Mango pulp : 3/4 cup
Yogurt : 1 cup
Sugar : 1/2 cup
Saffron
Cardamom
Cahewnuts
Raisins
Method
Drain the water from yogurt by tying it in a cloth and hang it for 2 hours.
Mix drained yogurt, mango pulp and sugar .
Add more sugar if needed.
Add cardamom powder, saffron and mix well.
Garnish with raisins, cashewnuts and refrigerate for 2 to 3 hrs before serving.

Fruits : 1 cup ( papaya, banana, guava, orange and grapes)
Honey : 2 tbsp
Method
Wash and cut the fruits into bite size pieces.
Take a tooth pick and arrange the fruits one by one.
Arrange the skewers on a plate and drizzle honey on it and serve for your kid's party.
Guava Ice cream/ Sorbet

Guava : 5
Sugar : 5 tbsps
Cherries : 5
Banana : 1
Method
Cut the guavas in half and scoop out the seeds.
In a mixie jar put guava, banana, sugar and grind until smooth.
Add chopped cherries to it.
Place this mixture in Freezer for 45 mins.
Serve chilled.
