Carrot & Apple Salad with Crushed Peanut Chikki - Just 3 ingredients Salad

Ingredients

Carrots                          : 3
Apple                             : 1
Peanut chikki               : 4 

Method

Wash & remove the skin of the carrot & coarsely grate it.
Wash & remove the skin & core of the apple & cut into cubes.
Crush the peanut chikkis roughly.
Take a mixing  bowl , add grated carrot , apple cubes, crushed peanuts and mix everything well.
Serve & enjoy...
This is quick , easy & simple salad with just 3 ingredients..



Vegetables, Nuts & Fruits Salad with Saffron Dressing





Ingredients

Grated Carrot        : 1/2 cup
Chopped Capsicum : 1/4 cup
Chopped Lettuces   : 1/4 cup
Chopped cucumber : 1/4 cup
Chopped Onion      : 2 tbsps
Chopped Parsley     : 1 tbsp
Sliced Almonds       : 2 tbsps
Chopped Dates     : 2 tbsps
Walnuts                  : 2 tbsps
Raisins                    : 1 tbsp
Chopped Apple      : 1/4 cup

Dressing 

Saffron  Threads  : 1/4 tsp
Olive Oil             : 2 tbsps
Garlic                  : 2
Honey                 : 1tsp
Pepper powder  : 1 tsp
Lemon juice      : 1tbsp
Orange juice     : 2 tbsps
Salt

Method

In a wide bowl add all the Salad ingredients .
Roast the garlic and set aside.
To make the dressing , in a bowl add the roasted garlic flesh and the remaining dressing ingredients , mix well
until the mixture becomes thick.
Add the dressing to the salad ingredients, toss well until well combined and serve.




Simple Beetroot Salad

Ingredients

Beetroot   : 1
Chopped onion  : 1/2 cup
Chopped coriander & chopped mint leaves : 1/4 cup
Olive oil  : 1 tbsp
Lemon juice : 1 tbsp
Pepper powder : 1tsp
Mustard powder  : 1/2 tsp ( optional)
Salt

Method

Peel & dice the beetroot into slices and keep aside.
Mix lemon juice,olice oil, pepper powder,mustard powder ,salt and add diced beetroot slices to it.
Let it sit for half an hour.
Add chopped onion and coriander + mint leaves before serving. 
This is perfect side salad.
