Rava Coconut Laddu with Condensed milk
Ingredients
Rava / semolina : 1 1/2 cup
Grated coconut : 3/4 cup
Condensed milk ; 1 cup
Ghee : 2 tsp
Cashwewnuts
Raisins
Cardamom powder
Method
Heat ghee in a pan , fry cashewnuts till golden brown.
Add raisins and fry till they puff up.
Add rava and fry on medium flame for few minutes till it gets golden brown.
Now add grated coconut to it and fry for few seconds.
Add cardamom powder , condensed milk to it and mix well.
Cook for 2-3 minutes and remove from flame.
Let it cool for some time.
When the mixture is still warm , take a little portion of it , and roll into balls.
Store it in an air tight container .

Thattai / தட்டை - Crispy savory Crackers
Ingredients
Rice flour : 1cup
Urad dal flour : 1 tsp
Chana dal : 2 tbsps
Butter : 1 tbsp
Red chilli powder : 3/4 tsp
Turmeric powder : 1/4 tsp
Curry leaves
Asafoetida
Salt
Oil
Method
Soak chana dal in water for 30 minutes , drain and keep aside.
In a mixing bowl , mix together rice flour, urad dal flour, red chilly powder, required salt , asafoetida , butter, using your fingers.
Add soaked chana dal , curry leaves now and mix.
Add required water little by little and make a stiff dough.
Take a plastic paper , apply oil , make small ball of the dough , press the ball and flatten it.
Prick holes with a fork to prevent puffing while frying.
Heat oil in a heavy bottomed kadai , reduce the flame to medium , gently transfer the flattened dough on your hands , and slide it into the oil.
Deep fry until golden brown.
Drop them on a paper towel , and let it cool.
Store it in an air tight container.

Thenkuzhal / தேன்குழல் - Diwali snacks
Ingredients
Rice flour : 6 cups
Urad dal flour : 1 cup
Butter : 2 tbsps
Sesameseeds ; 1 tsp
Asafoetida
salt
Oil
Method
In a mixing bowl add rice flour, urad dal flour, butter , salt , asafoetida ,sesame seeds and mix with your fingers.
Add required water and make a dough. ( like chapathi dough)
Heat oil in a heavy bottomed kadai .
Fill the murukku presser with the dough , press the mould directly over the hot oil and put circles.
Flip to other side and fry till crisp.
Take it out and place it in a oil strainer and let it cool.
Store it in an air tight conrtainer.

Kesar Khoya Burfi
Ingredients
Khoya : 1 cup
Sugar : 1/4 cup
Saffron : a pinch
Cardamom powder
Mixed nuts : 2 tbsps
Method
Soak saffron in 1 tbsp milk for 10 minutes.
Take khoya , sugar , saffron mixture, cardamom powder in a heavy bottomed kadai , mix and cook on medium flame for 7 - 8 minutes.
Grease a plate with little butter , When the mixture starts clumping together , remove from flame and pour it in the greased plate .
Level it smoothly on the top using the back of a spoon / or with a butter paper.
Sprinkle mixed nuts on top and allow it to cool.
Cut into desired shapes.
Serve and Enjoy...
South Indian MIxture / மிக்ஸர் - Diwali recipes
Ingredients
Oma podi ; 2 cups ( recipe here )
Kara poondi : 2 cups
Poha : 1 cup
Peanuts : 1/2 cup
Red chillies : 10 nos
Curry leaves : 1/2 cup
Roasted gram dal : 1/4 cup
Salt
Asafoetida
Oil
Method
For kara boondi
Besan flour : 1 cup
Rice flour : 1 tbsp
Red chilly powder : 1/4 tsp
Hot oil : 1 tsp
Asafoetida
Cashewnuts
salt
oil
curry leaves
Method
In a mixing bowl , add besan flour , rice flour ,red chilly powder, asafoetida, hot oil ,salt and mix with fingers.
Slowly add required water and make a smooth batter ( like dosa batter )
Heat oil in a kadai , hold a slotted laddle over the oil , gently pour the batter on the laddle and spread it .
Fry until golden brown.
Remove and keep aside.
To prepare mixture
Fry peanuts on hot oil and keep aside.
Fry fried gram in medium flame and keep aside.
Fry poha / aval now and keep aside.
Fry cashewnuts and keep aside.
Fry curry leaves and keep aside.
Lastly fry red chillies , keep aside and let it cool.
Take a dry mixie jar , add red chillies , asafoetida, 2 tbsps fried cury leaves , salt and blend it well.
Take a large mixing bowl , add crushed oma podi , kara boondi , peanuts, fried gram , poha, cashwnuts, curry leaves and mix gently.
Add the spice powder now and mix everything well until combined.
Allow it to cool and store it in an air tight container.

Oma Podi / ஒமப்பொடி - Diwali recipes
Ingredients
Besan flour ; 3 cups
Rice flour : 1 cup
Ajwain : 1 tsp
Butter : 1 tbsp
Hot oil : 1 tbsp
Salt
Oil
Method
Soak ajwain in 3 tbsps warm water for 1/2 an hour , then grind it .
Filter it and keep aside.
Sieve besan flour , rice flour .
Take a mixing bowl , add the ajwain water, butter , required salt , hot oil and mix.
Add water little by little and form a thick dough.
Heat oil in a kadai , press through the idiyapam press in oil , form a big circle in oil .
Turn to other side carefully and cook till the bubbles ceases.
Take it out , place it in a paper towel and allow it to cool.
Store it in an air tight container.
Chocolate Sandesh - Diwali sweets
Ingredients
Homemade paneer : 10 tbsps ( Recipe here )
Sugar : 3 1/2 tbsps
Cocoa powder : 1 1/2 tbsps
Cardamom powder : a pinch
Method
Take a blender, add paneer , sugar , cocoa powder , cardamom powder and blend until smooth .
Add the paste to the heavy bottomed kadai , and cook on low flame.
Cook for 5 - 6 minutes till it turns dry and becomes thick.
Remove from flame and let it cool.
It should have the consistency of a very soft dough.Divide it into 8 - 10 equal portions and roll into balls.
Put each one of them in the muffin cups and garnish with sliced pista.
Manapparai Murukku / மணப்பாறை முறுக்கு - Diwali recipes
Ingredients
Rice flour ; 1 cup
Urad dal flour : 1/4 cup ( Dry roast urad dal till golden brown.Let it cool and grind to a fine ) powder.
Ajwain : 1/4 tsp
Black sesame seeds : 1/2 tsp
Asafoetida : 1/4 tsp
Hot oil : 2 tbsps
Salt
Oil
Method
In a bowl add rice flour , urad dal flour , ajwain , sesame seeds salt ,asafoetida , hot oil and mix well with your fingers.
Add required water and make a dough.
Heat oil in a kadai.
Grease the murukku maker with little oil , take a portion of dough press out the murukkuonto a greased plate / plastic sheet.
Reduce the oil heat to medium , gently drop the murukku into the oil .
Cook both sides and fry till it turns crispy .
Remove from oil and let it cool.
Store it in an air tight container.
Enjoy..
Kasi Halwa / White pumpkin Halwa / காசி அல்வா - Diwali Sweets
Ingredients
Grated White pumpkin : 1cup
Sugar ; 3/4 cup
Ghee : 1 1/2 tbsp
Cardamom powder : 1/2 tsp
Saffron : a pinch
Edible camphor ; very little
Cashewnuts : 1 tbsp
Method
Fry cashewnuts in little ghee till they turn golden brown colour and keep aside.
Take a fine muslin cloth , filter the grated pumpkin .
Boil the filtered pumpkin water in a heavy bottomed pan.
Add saffron , filtered pumpkin in the boiling water and let it cook on low flame.
Add sugar , mix and let it cook again.
When it looks glossy and starts to combine well, add ghee , cardamom powder, edible camphor and mix well and cook again.
When the mixture leaves the sides of the pan , add fried cashewnut , mix and remove from fire.
Serve hot.
