Simple Cabbage Rice

Ingredients

Finely Chopped Cabbage                : 1 cup
Chopped onion                                : 12 cup
Cooked rice                                     : 1 cup
Oil                                                    : 2 tbsps
Mustard seeds                                  : 1/2 tsp
Urad dal                                           : 1/2 tsp
Chana dal                                         : 1/2 tsp
Salt



Method

Heat oil in a kadai , splutter mustard seeds , urad dal , chana dal .
Add chopped onion and fry till onions turn translucent.
Add finely chopped cabbage and saute for few minutes.
Add turmeric powder , salt , mix well .
Now add red chilli powder , mix , cover with a lid & cook for 2 - 3 minutes .
Now add cooked rice , mix well ,cover , lower the flame & let it cook for few more minutes.
Remove from flame and serve hot with Potato chips.






Ericha Kuzhambu / எரிச்ச குழம்பு




Ingredients

Leftover Sambar                               : 1 cup Leftover Rasam                                : 1/2 cup
Chopped onion                                 : 3/4 cup
Oil
Mustard seeds
Curry leaves
Salt




Method

Heat 1 tbsp oil in a pan , add mustard seeds & curry leaves.
Add chopped onion and fry.
Add leftover sambar , rasam to it , reduce the flame and mix well.
Add little salt and let it boil until thick.
Serve with Curd rice / dosa.

Idli Manchurian - leftover Idli recipe



Ingredients


Leftover idlies                 : 10 nos
Spring Onion                 : 1/2 bunch
Tomato sauce                  : 1 tsp
Chilly sauce                     : 1 tsp
Soya sauce                       : 1 tsp
Chopped Garlic                : 1 1/2 tbsp
Green Chilly                     : 2 nos
Capsicum                          : 1
Oil
Salt

Method

Cut the idlies into 4 pieces.
Fry the idli pieces one by one, sprinkle little salt ,  deep fry and keep aside.
Heat 2 tbsp oil in a frying pan, add chopped garlic and fry.
Add chopped green chilly, white part of the spring onion and fry.
Add soya sauce, chilly sauce, tomato sauce, chopped capsicum and fried idlies.
Lastly add salt and chopped spring onion, mix and fry on a high flame for few minutes and remove from fire.
Serve hot & enjoy..


Leftover Rice Dosa



Ingredients

leftover rice          : 1 cup
Rice flour                : 1 cup
Wheat flour             : 1/4 cup
Yogurt                      : 1/2 cup
Salt
Oil

Method

Grind the cooked rice along with wheat flour, rice flour, salt to a smooth paste.
To this add yogurt and required water  mix well and make it into a batter.
Heat a non stick pan , pour a laddle of batter, spread out in a circular motion.
Add 1 tsp oil , cook on medium flame until golden.
Cook the other side similarly , remove from tawa .
Serve hot with chutney.











Kothu Chapathi - Leftover recipes


This is what happens when i have leftover chapatis and leftover chana masala..

Ingredients

Leftover Chapathis            : 4 
Leftover chana masala       : 1/2 cup ( chana masala recipe here) 
Chopped Onion                 : 2 tbsps
Tomato                              : 1
Green chilly                       : 1
Red chilly powder              : 1/4 tsp
Ginger - Garlic paste         : 1/4 tsp
Fennel seeds                       : 1/4 tsp
Coriander leaves
Salt
Oil


Method

Cut the chapathis into strips and keep aside.
Heat 1 tbsp oil in a frying pan, splutter  fennel seeds .
Add chopped onion, chopped green chilly and fry.
Add ginger garlic paste,chopped tomato ,salt and fry on medium flame till they turn mushy.
Add the chana masala , chapathi pieces and mix everything well.
Finally add chopped coriander leaves.
Remove from flame and serve hot.
Enjoy....
   


Leftover Rice Tikkis






Ingredients 

Leftover cooked rice         : 1 cup
Besan flour                        : 4 tbsps 
Chopped onion                 : 2 tbsps
Red chilly powder             : 1 tsp
Pac bhaji masala powder   : 1 tsp
Cumin powder                   ; 1/2 tsp 
Green chilly                       : 1
Coriander leaves             
Salt
Oil

Method 

Take a bowl,put the cooked rice and mash well.
To that add besan flour, onion,red chilly powder,pav bhaji masala powder,cumin powder,chopped green chilly.coriander leaves, salt and knead everything well.
Make a small ball,flatten it .
Heat a frying pan,add 1tbsp oil ,fry the rice tikkis in the oil and cook both sides .
Serve hot with any sauce.
