Masala Paal / Madras Masala Paal / மசாலா பால்



Ingredients

Milk                                : 3 cups
Sugar                              : 3 1/2 tbsps
Badam                            : 10
Saffron                            : a pinch
Edible camphor               : little pinch
Saara paruppu                 : 2 tbsps
Cardamaom                     : 2
Cloves                              : 2
Cinnamon stick                 : 1
Cashewnuts                       : 5
Ghee



Method

Soak badam in hot water for 1/2 an hour , peel the skin and grind to a smooth paste.
Boil milk with sugar , saffron , cloves , cinnamon stick, edilble camphor , cardamom and mix.
Add the badam paste , saara paruppu , mix and let it boil on low flame.
Once the milk reduces to 3/4 quantity remove from flame.
Fry cashew nuts in 1 tsp ghee till they turn into brown colour and add it to the milk. ( this is optional )
Serve hot.


Cucumber Fruit Sharpat / வெள்ளரி பழம் நன்னாரி சர்பத்



Ingredients

Cucumber fruit                   : 1 cup
Nannari syrup                     : 2 1/2 tbsps
Lemon juice                        : 2 drops
Ice cubes                             : 5
water                                    : 1 cup


Method

Remove the skin of cucumber fruit and roughly mash it.
Add nannari syrup , water, lemon juice and ice cubes.
Mix everything well.
Serve and enjoy



Neeragaram / Pazhaya sadam / பழைய சாதம் - Summer Recipes



Ingredients

Leftover rice           : 1 cup
Water                      : 1 cup
Buttermilk              : 3/4 cup
Shallots / Small onion   : 10 nos ( chopped)
Salt


Method

Previous night soak the rice with water till next day morning.
Next day crush the rice with salt,chopped onion,buttermilk and mix everything well. 
Serve and Enjoy...



Neer More / Neer Mor recipe ( Spiced Buttermilk)



Ingredients

Curd / yogurt            : 1 cup
Water                         : 4 cups
Green chilly               : 1 
Grated ginger             : 1 pinch
Curry leaves               : 1 spring
Coriander leavs          : 1 tbsp chopped 
Asafoetida                  : a pinch
Salt


Method

Grind green chilly,ginger,coriander leaves with little water and filter it. 
Chop the curry leaves.
Beat the curd smoothly with salt and add all the ingredients including filtered mixture.
Mix everything well.
Serve chilled.
Enjoy. 



Mixed Nuts Kheer



Ingredients

Mixed nuts        : 1/2 cup ( i used Badam,pista,Cashewnuts)
Cardamom        : 2 
poppy seeds       : 1 tsp
Saffron               : a pinch
Milk                   : 3 cups
Sugar                  : 1/2 cup 
Sara Paruppu / chironji       : 1 tbsp

Method




                                      Soak the nuts,Cardamom pods,poppy seeds in 1/2 cup hot milk  for 1 hour



                           take out the skin of the almonds and grind the nuts into a smooth paste.



Mix the paste with the remaining 2 1/2 cups milk,add saffron and boil in a heavy bottomed pan on low flame.



                                                    Add sugar, mix well and boil for 3 minutes




                                                 Add sara paruppu and switch off the flame.


                     Mixed nuts  kheer is ready to serve now . You can serve it chilled or serve warm.


Tulsi Tea - Tea Recipes



Ingredients

Tulsi leaves        : 6 nos
Tea powder       : 1/2 tsp 
Crushed ginger  : 1/2 pinch 
Sugar                 : 1 tsp
Water                : 1 cup



Method

Boil water in a pan,add tea powder,sugar ,tulsi leaves and crushed ginger .
Boil for 5 minutes and remove from fire.
Strain into serving cups.
Garnish with few tulsi leaves and serve hot.. 


Saffron Milk / Kumkumapoo Paal



Ingredients

Milk        : 2 cups
Sugar      : 5 tbsps or to taste
Saffron Strands - a generous pinch 
Cardamom powder  : a pinch


Method

Soak saffron strands in  little milk .
Heat milk and allow it to boil.
Add soaked saffron,sugar,cardamom powder and allow it to boil on low flame for few minutes.
Serve hot.



Masala Paal



Ingredients

Milk            : 4 cups
Sugar          : 1/2 cup
Soaked badam : 1/4 cup
Piyal seeds ( sara paruppu)  : 2 tbsp
Cardamom powder     : 1 tsp
Cinnamon                    : 1
Cloves                         : 3
Saffron                        : 1/4 tsp 





Method

Soak saffron in little milk for 15 minutes.
In a wide heavy bottomed vessel,add milk,cinnamon,cardamom,cloves and boil till the milk is reduced to half the quantity.
Grind almonds in milk to a smooth paste.
To the boiling milk,add the almond paste,saffron milk,sugar and mix well.
Let it boil on low flame for few minutes.
Add the piyal seeds and switch off the fire.
Cool and serve.
