Ragi Poori / ராகி பூரி




Ingredients

Ragi flour                            : 1 cup
Wheat flour                         : 1 cup
Ghee                                    : 1 tsp
Salt                                       : to taste 
Oil                                        : for deep frying 



Method

In a wide bowl add ragi flour , wheat flour , salt , ghee and mix well
Slowly add water , mix and knead well to form a stiff dough.
Close and keep aside for 1/2 an hour.
Knead the dough once again , make small balls, roll out into small circles.
Heat oil in a kadai , fry the poori till golden brown.
Serve hot ..

Instant Bhatura with Soda Water





Ingredients

All purpose flour / maida                     : 1 cup 
Sooji / Rava                                          : 1tsp
Soda water                                            : 1/4 cup
Baking soda                                          : a pinch
Sugar                                                     : 1/2tsp
Salt
Oil



Method

In a wide bowl add maida, rava , baking soda , salt ,sugar and mix well.
Add soda water and knead well. 



Add 1 or 2 tbsps of soda water if needed.
Cover it with a wet cloth and keep aside for 15 to 20 minutes.
Heat oil in a frying pan / Kadai.
Divide the dough into lemon sized balls, roll it.
When the oil is hot, gently slip one bhatura into it and fry till golden brown in colour.

Serve hot with Quick Green Peas Curry made with Besan flour








Mixed Vegetable Kothu Parotta (Version 2)



Ingredients


Parotta                                : 4
Chopped onion                  : 1/2 cup
Chopped Tomato               : 1/4 cup
Vegetable Salna                 :  1 cup ( Recipe here
Green chillies                     : 2
Ginger - Garlic paste          : 1/2  tsp
Garam masala powder        : 1/2 tsp
Salt
Oil
Coriander leaves



Method

Roll the Parottas & cut them into pieces and keep aside.
Heat oil in a pan,add the onions,fry well.
Add ginger - garlic paste,tomatoes and stir.
Add slitted green chilles and salt to it.
Add chopped parotta pieces ,vegetable salna , garam masala powder , 1 tsp oil , mix well and cook on high flame for 2 minutes.
Garnish with coriander leaves and serve Hot...

Brinjal Thokku / கத்திரிக்காய் தொக்கு



Ingredients

Brinjal                              : 1 (big)
Chopped onion                : 1/2  cup
Chopped tomato              : 1/4 cup
Ginger - Garlic paste       : 1 tbsp
Red chilly powder           : 1 1/4tsp
Coriander powder            : 1 tsp
Garam masala powder     : 3/4 tsp
Green chilly                     : 1
Turmeric powder
 Salt
Mustard seeds
Fenugreek seeds
Coriander leaves
Oil


Method

Heat 3 tbsp gingely oil in a cooker , add mustard seeds , fenugreek seeds and fry.
Add chopped onion , 1 green chilly and fry.
Add ginger garlic paste , tomatoes and fry.
Add turmeric powder, red chilly powder , coriander powder , salt and mix everything well.
Now add garam masala powder ,chopped brinjal and mix.
Cover the pressure cooker , cook for 2 whistles on medium flame and remove from flame.
Let it cool.
Open the cooker ,mix , saute for few more minutes to thicken the thokku.
Garnish with coriander leaves , remove from fire .
Serve hot with poori / Chapathi..



Peas Paratha



Ingredients

Wheat flour                ; 1 cup
Frozen peas                : 3/4 cup
Cumin seeds               : 1 tsp
Grated ginger              : 1/4 tsp
Chopped green chilly  : 1 tsp
Ghee                            : 2 tsp
Sugar                           : 1/2 tsp
Oil
Salt



Method

Knead the dough with salt,1 tsp ghee and required amount of water and keep aside for 1/2 an hour.
Heat 1 tsp ghee in a pan , add cumin seeds.
Add grated ginger , green chilli , sugar and fry.
Add green peas , salt and fry.
Add 1/4 cup water and cook.
Mash the green peas with a potato masher .
Remove from flame and let it cool.
Take a lemon sized ball from dough for each paratha and stuff 2 tbsps of peas mixture in the center.
Make into round shape and roll it out .
Cook the parathas with little oil on hot tawa until both sides are golden brown .
Serve with any side dish or yogurt.

Bengali Luchi / Bengali Puri



Ingredients

Maida                    : 1 cup
Ghee                     : 1 tbsp
Salt
Oil


Method

Take a wide bowl , add maida , ghee , salt and mix well.
Knead into a soft dough using enough warm water.
Cover with a cloth and keep aside for 1/2 an hour.
Knead the dough once again , make small balls, roll out into small circles.
Heat oil in a kadai , fry the poori till golden brown.
Serve hot ..

Kothu Parotta - Street food



Ingredients

Frozen parotta / paratha     : 4 nos
Chopped onion    : 1/4 cup
Chopped tomato  : 2 tbsps
Chopped carrot    : 2 tbsps
Chopped capsicum  : 2 tbsps
Ginger - Garlic paste   : 1 tsp
Red chilly powder       : 1 tsp
Pepper powder             : 1/4 tsp
Garam masala powder  : 1/2 tsp
Fennel seeds                 : 1/2 tsp
Green chilly                  : 2 nos
Coriander leaves
Salt
Oil

Method

Chop the parotta into small pieces and keep aside.
In a pan, heat 1 1/2 tbsp oil ,temper with fennel seeds, curry leaves and chopped green chilly.
Add chopped onion and fry.
Add tomato ,carrot,ginger - garlic paste and cook till the tomatoes turns mushy.
Add turmeric powder,red chilly powder, pepper powder,garam masala powder salt and stir.
Add the chopped paratha pieces, chopped capsicum and mix everything well.
Finally add coriander leaves,mix, cook for few more minutes and remove from flame.
Serve with raita.

Maida poori / Puri



Ingredients 

Maida      : 1 cup
Rava / sooji    : 1 tbsp
Curd               : 2 tbsps
Sugar              : 1/2 tsp
Salt
Oil






Method


Mix maida, rava, sugar, salt ,curd,  little water and knead into a soft dough.
Keep aside for 1/2 an hour.
Take a small lemon size ball from the dough and roll it into circles.
Meanwhile Heat oil in a pan.
Drop poori and fry them on medium heat.
Flip to the other side and fry.
Serve with any side dish.

Mixed vegetable kathi roll / Vegetable Frankie



Ingredients

Wheat chapatis   : 4
Chopped onion    : 2 tbsps
Chopped carrot    : 3 tbsps
Chopped capsicum  ; 3 tbsps
Chopped tomato      ; 2 tbsps
Grated cabbage         : 2 tbsps
Red chilli powder      : 3/4 tsp
Garam masala powder  : 1/2 tsp
Ginger - garlic paste      : 1tsp
Cumin seeds                   : 1/4 tsp
Tomato sauce                  : 3 tbsps
Salt
Oil
Coriander leaves

Method

Heat 1 tbsp oil in a pan, add cumin seeds as seeds crack ,add chopped onion,ginger - garlic paste and fry on low flame.
Add tomato,carrot,cabbage mix well and stir for 3 minutes.
Add red chilli powder,salt,garam masala powder, coriander leaves and cook on low flame for few minutes.
Filling is ready now and keep aside. 

Assembling the kathi roll 

Take one roti / chapati ,spread a tsp of tomato sauce on it. 
Place a spoonful of the vegetable filling on one side of the chapati.
Roll the chapathi tightly ,cut into halves and serve.

Spinach & Carrot Paratha - School lunch box recipes



Ingredients

Wheat flour         : 1 cup
Spinach               :  1/2 cup 
Carrot                  : 2 nos
Cumin seeds        : 1/4 tsp
Grated  ginger      : 1/2 pinch 
Salt
Oil for cooking



Method

Wash and finely chop the spinach.
Grate the carrot. 
Combine all the ingredients in a bowl and knead into a soft dough using water.
Keep the dough aside for 10 minutes.
Divide the dough into 8 equal portions and roll out each portion into a circle.
Dust little wheat flour to prevent sticking while rolling. 
Heat a pan,drizzle little oil, cook the parathas both sides in medium flame till golden brown.
Serve hot with any sidedish..

Garlic Dal



Ingredients

Moong dal         : 1/2 cup
Tur dal               : 2 tbsps
Green chillies     :2 nos
Garlic                 : 5 
Onion                 :1
Frozen Green peas    : 2 tbsps ( optional)
Cumin seeds            : 1 1/2 tsps
Turmeric powder     : 1/4 tsp
Ghee                        ; 1 tbsp
Salt
Curry leaves
Coriander leaves



Method

Wash and pressure cook the dals with turmeric powder for 3 whistles.
Chop the onion ,green chillies.garlic.
Heat ghee in a pan,add cumin seeds.
Once cumin seeds crackle,add green chillies,onion,chopped garlic,curry leaves,green peas and fry.
Let the peas cook for few minutes.
Now add the cooked dal,salt and let it boil on low flame for few minutes.
Switch off the flame and serve with chapathis.

Cucumber & Carrot Salad

Finelly chop peeled cucumber & peeled carrot,add pepper powder,salt to it and mix everything well.






Mango Poori



Ingredients 

Grated Mango       : 1/4 cup
Wheat flour            : 1  cup 
Chilli powder          : 1/2 tsp
Jeera powder         : 1/2 tsp
Salt
Ghee                     : 1/2 tsp
Oil 


Method

To the flour,add the grated mango,chilli powder,jeerapowder,ghee,salt an mix well.
Add little water at a time and form a stiff dough. 
Keep aside for 15 minutes.
Roll into pooris ,deep fry in hot oil.
Drain on paper towels and serve with your choice of any side dish.


Classic Combo - 14

Aloo Poori / Potato Poori



Ingredients 

Cooked ,Peeled &  mashed potato   : 1/2 cup (  2 nos )
Maida                                 : 1  cup 
Wheat flour                         : 1/2 cup 
Curd                                   : 1 tbsp
Salt
Oil 




Method

Mix mashed /grated potato,salt,maida,wheat flour thoroughly.
Add curd and mix well.
Make a firm dough using little water.
Keep aside for 1/2 an hour.
Take a small lemon size ball from the dough and roll it into circles.
Meanwhile Heat oil in a pan.
Drop poori and fry them on medium heat. 
Flip to the other side and fry.
Serve with any side dish..
