Masala Triangle Paratha with Step by Step Pictures

                                                                           
                                                                                                                                                                                                                                                                                                                                                                           


Ingredients

Wheat flour          : 1 cup
Cumin seeds        : 1/2 tsp
Chopped coriander leaves  : 1 tbsp
Chopped Mint leaves          : 1 tbsp
Red chilly powder               : 3/4 tsp
Pav bhaji masala powder     : 1/2 tsp
Turmeric powder
Salt
Oil 
Water

Method


In a wide bowl put wheat flour,cumin seeds,coriander leaves,mint leaves,red chilli powder,pav bhaji masala powder,salt , turmeric powder and mix well,pour the water and make a stiff dough.
Divide the dough into equal balls. 


                                                            Roll the ball into circle shape.


                                                                        Add 1/2 tsp oil


                                                                          And Spread Evenly



                                                                    Then Fold it into Half          
                                                                                           


                                                              And Fold it again


 


Roll it out into a Triangle paratha and place it on a hot tawa and cook..Flip to other side and spread little oil ,press it with a spatula and cook on low flame..



Take it away from fire . 

  
Serve hot with any side dish..


Aloo Paratha



Ingredietns

Wheat flour                    : 1 1/2 cup
Boiled & mashed potato : 1 cup
Chopped onion              : 1/4 cup
Chopped green chillies   : 1/2 tsp
Garam masala powder   : 1 tsp
Jeera powder                : 1/2 tsp
Red chilli powder           : 1 tsp
Chopped coriander leaves   
Salt
Oil

Method

Knead the dough with salt,1 tsp oil and required amount of water and keep aside for 1/2 an hour.
Take the boiled potato in a bowl,add onion,masala powders,salt,coriander leaves and mix well.
Take a lemon sized ball from dough for each paratha and stuff 2 tbsps of potato mixture in the center. 
Make into round shape and roll it out ..
Cook the parathas with little oil on hot tawa until both sides are golden brown .
Serve with any side dish or tomato sauce. 



    

Oats Masala Paratha



Ingredients

Wheat flour      : 1 cup
Oats                 : 1/4 cup
Grated ginger    : a pinch
Red chilli powder  : 3/4 tsp
Turmeric powser   : 1/4 tsp
Cumin seeds          : 1/2 tsp
Coriander leaves    : 2 tbsps
Salt
Ghee                      : 1 tbsp
Oil


Method

Mix all the ingredients except oil in a wide bowl and make soft dough.
Keep aside for 1/2 an hour.
Divide the dough into 10 equal portions and roll out.
Heat a tawa,cook the parathas with little oil spread around the edge.
Turn it over & cook the other side.

Paneer Kathi Roll

Ingredients for making Roti 

Wheat flour    ; 1 cup
Salt
Water as required
Oil                  : 1 tsp

Method

Make a smooth dough of the flour,salt,oil and water as required and keep aside for 15 minutes.
Make round rotis and cook both sides with little oil. 
Put 1 tbsp filling into the roti and roll it.
Serve with Tomato sauce.







Veechu Parotta



Ingredients 

Maida / All purpose flour  : 1 cup
Water
Oil
Salt 



Method 

Take maida in a wide bowl,add salt and mix well.
Add water slowly and make a dough.
The consistency of the dough would be little soft. 
Apply little bit of oil,mix it into the dough,cover it  and let it rest for 2 hours.
Make balls,roll it into a very thin chapati,apply some oil on it,dust some maida on top of the oil.
Fold the opposite sides,then again fold the remaining sides.
Heat a tawa, put the parotta carefully on it and let it cook.
Flip to other side , pour some oil all aound and cook well.

Mint Paratha / Pudina Paratha



Ingredients 

Wheat flour      : 1 cup
Chopped mint leaves  : 11/2 cup
Ginger + Green chilly paste  : 1/2 tsp
Cumin seeds             : 1/4 tsp
Lemon juice              : 1/4 tsp
Salt
Oil 



Method

Mix everything except oil.
Using water make a dough.
Cover & keep aside for an hour.
Divide the dough into equal balls & roll it into a circle. 
Heat a tawa & rub it with little oil.
Cook the parathas on medium flame.
When cooked on one side flip to other side and apply little oil.
Serve with any side dish.. 
I Served with Green gram dal Sabji,Cucumber Salad & with Brinjal stir fry.





Lacha Paratha



Ingredients 

Wheat flour            : 2 cups
Water                    : 3/4 cup
Ghee                      : 2 tbsp
Salt




Method

Mix wheat flour & salt ,add water and knead until a soft dough is formed.
Keep aside for 1/2 an hour.
Divide the dough into equal balls.
Roll it thinly into flat round circle.
Apply 1/2 tsp oil over it and spread evenly.
Fold the dough,  start creating pleats by folding with the help of fingers and stretch it .
Dust the rolling surface with flour, flatten each dough .
Heat a tawa, fry each paratha until brown,flip and cook the otherside,drizzle some oil.
Serve with any Kurma or curry of your choice. 



Braided Bread with Carrot & Paneer Stuffing





Ingredients

Al purpose flour /Maida          : 2 cups
Dry  Yeast                              : 1 tsp
Honey                                     : 1 tbsp
Lukewarm water                     : 1/2 cup
Salt



For the stuffing

Grated carrot         : 1 cup
Grated paneer       : 1/2 cup
Chopped tomatoes : 1/4 cup
Chopped onion      : 1/4 cup
Pav bhaji masala    : 1 tsp
Red chilly powder  : 1/2 tsp 
Jeera                      : 1/2 tsp
Salt 
Coriander leaves 
Oil

Heat oil in a pan,add jeera and let it splutter.
Add chopped onion and tomatoes and mix well.
Add carrot,paneer ,salt and stir for few minutes.
Add the masala powder and let it fry for few minutes.
Finally add coriander leaves and keep aside.


Method

Preheat oven to 200C
Mix flour,honey,yeast,salt,water and knead gently.
Dust the working surface with little maida,and knead the dough for for minutes.
Transfer the dough into a bowl ,cover with a towel and let it rise for 1 hour. 
Roll the dough into rectangular shape.
Place stuffing in the center .
Make slanting cuts both sides,braid the strips up over the filling .
Finish the folding and transfer the loaf into a greased baking tray.
Let it sit again for 1/2 an hour.
Brush the top with olive oil or milk and bake for 20 minutes.
Let it cool down for few minutes.
Slice and enjoy .

Soya Granules Roti / Chapati


Ingredients 

Wheat flour  : 1 cup
Soya Granules  : 1/2 cup
Curd                : 2 tbsp
Red chilly powder : 1 tsp
Dry mango powder  : 1 tsp
Freshly roasted and powdered cumin  : 1 tsp
Garam masala powder : 1/2 tsp
Salt
Oil

Method

Soak soya granules in hot water for 15 mins .
Drain it and squeeze out the water completely.
Mix all ingredients (except oil) in a wide bowl, slowly add required water and knead to a soft dough.
Keep closed for 1/2 an hour.
Make balls and roll into a little thick roti than usual.
Cook both sides on a hot tawa with little oil..
Serve with raita or plain dal..


Sprouted Green Gram Stuffed Paratha



Ingredients

For the dough
Wheat flour    : 2 cups
Salt
Water

For the stuffing

sprouted green gram dal  : 1 cup
Onion chopped               : 1/4 cup
Tomato                          : 1
Green chillies                  : 2
Red chilly powder          : 1 tsp
Garlic                            : 2 pods
Garam masala powder    : 1 tsp
Jeera                              : 1/2 tsp
Oil
Salt

Method

For the dough, take wheat flour ,add salt to it.
Add required water and knead to a soft dough.
Cover and keep aside.

Cook the sprouted gram dal till soft ( or in pressure cooker with little water till 2 whistles)
Grind onion, tomato , green chilly, garlic and cooked dal to a coarse paste without adding water.
Heat oil in kadai, add jeera, add the paste ,salt ,mix well and saute on low flame.
Add red chilly powder,garam masala powder and mix everything together.
Take off from flame and let it cool.

Roll out small disc of  the dough.
Fill 1 tbsp of filling.
Fold the edges and roll out into thick parathas.
Now heat a pan, put rolled paratha on it.
Cook on medium flame ,flip and cook again ,drizzle some oil at the sides and cook till it is done.
Serve hot with sauce or any raita.

Gobi Paratha

Ingredients

Wheat flour : 2 cups
Cleaned & grated cauli flower : 11/2 cups
Finely chopped coriander leaves : 1 cup
Cumin seeds                              : 1 tbsp
Green chillies ( deseeded)           : 3 (chopped)
Salt


Method

Mix grated cauli flower, Coriander leaves, cumin seeds, green chillies, salt and keep aside.
Knead wheat flour adding salt and required water to firm dough and let it rest for 1/2 an hour.
Take a lemon sized ball from dough for each paratha and stuff 2 tbsps of cauli flower mixture in the center.
Make into round shape and roll it out .
Some of the filling may come out but that's really tastes great for me.
Cook the parathas with little oil on hot tawa until both sides are golden brown .
Serve with any side dish or tomato sauce.

Beetroot stuffed Paratha

Ingredients

For the dough

Wheat flour : 1 cup
Salt
Enough water to make dough

For filling

Grated beetroot  : 1 cup
Finely chopped onion : 1/4 cup
Red chilly powder    ; 1 tsp
Garam masala powder : 1 tsp
Jeera powder               : 1/2 tsp
Coriander leaves          : 1/4 cup
Jeera                           : 1/4 tsp
Salt
Oil


Making dough

Mix flour ,salt and add enough water to make a firm dough and knead well for 5 to 6 mins and keep aside.

Making the filling

Heat oil in a kadai add jeera, chopped onion and fry well.
Then add grated beetroot and stir.
Put red chilly powder, garam masala powder , jeera powder, salt and fry.
When beetroot half cooked add coriander leaves, switch off the flame and let it cool.

Method

Divide dough into approximately 5 - 6 portions.
Dust 1 ball with flour and roll .
Place the beetroot filling in the center of the dough ,seal it and roll into a ball.
Roll to make a round or square paratha.
Cook the paratha on a hot tawa , when both sides are cooked ,add a little oil and cook till parathas turns golden brown.
Serve with any side dish of your choice ..

Chilly Paratha ( parotta)


Ingredients

Parotta        : 4
Onion         :2
Tomato      : 3
Ginger-garlic paste : 1 tbsp
Soya sauce   : 1 tbsp
Capsicum    : 1
Kashmiri Chilly powder   : 2 tbsps
Garam masala powder  : 1 tsp
Coriander powder        : 2 tsp
Salt
Oil

Method

Make tomato puree including chilly powder, garam masala powder and coriander powder and keep aside.
Chop the onion and capsicum ( like cube size) stir fry in liitle oil and little salt and keep aside.
Roll the parottas and cut them into pieces and keep aside..
Now heat oil in a pan and add ginger - garlic pasteand stir well.
Add tomato puree ( with masala powders) ,soya sauce and salt.
Now add chopped parottas and mix well till the masalas and parotta are mixed together.
Add Onion and capsicum and mix well.
Garnish with coriander leaves.
Serve with any raita.

Channa Batura


 
Ingredients

Maida         : 1 cup
Curd          : 1/4 cup
Salt            : to taste
Sugar        : 1 pinch
Oil

Method


Mix maida,curd, salt and sugar and make a dough.

Keep aside the dough for 2 hours.

Round even sized balls.Flatten the balls to puri

Deep fry this in oil till the poori pops fully and then remove it from the frying pan.

Serve with channa masala.

Naan

 



Ingredients

Maida          :  1 cup
Dried yeast   : 1/4 tsp
Sugar           : 1 tsp
Curd            : 1/4 cup
Salt


Method

Dissolve yeast in warm water and set aside for 20 mins
Mix sugar,salt and maida.
Make a hole in the flour mixture and pour curd and yeast mixture.
Knead into a dough  ,cover with a wet cloth and allow to double in size - about 3 hrs.
Don't knead the dough again.
Divide the balls into 6 portions and roll it into a thick round in shape like rotis.
Heat tawa , place the naan on it.
When you see the bubbles appear, turn to the other side  and increase the flame to high , flip the naan and place onto the open flame.
The naan now balloon up and now turn to the other side.
If needed smear the naans with butter.
Serve with any side dish.

Rumali Roti


Ingredients

Maida          : 1 cup
Wheat flour  : 1 cup
Oil               : 2 tbsp
Salt             : to taste

Method

Mix All the ingredients .
Knead into  a soft dough using water.
Keep aside for 1/2 an hour.
Take a small ball and roll as thin as possible.
Invert a deep tawa or iron pan on gas burner.
When hot spread the roti on the inverted tawa and let it cook.
When black spots appears on the roti remove from flame and fold like a handkerchief and serve with any side dish of your choice.

Oats Roti



Ingredients :

* oats - 1 1/2 cup
* Wheat flour - 2 cups
* Coconut - 1 cup
* Salt
* oil or ghee for coating the roti

Method :

* Mix wheat flour, oats, grated coconut and salt.. Use water to make dough..
* Keep the dough aside for 1/2 an hour.
* Divide the dough into 10 equal parts..Roll it like chapati..
* Heat tawa , cook the rotis in medium flame,when they are done take it out and coat with ghee or oil.
* Serve hot with any side dish ..
