Instant Bhatura with Soda Water





Ingredients

All purpose flour / maida                     : 1 cup 
Sooji / Rava                                          : 1tsp
Soda water                                            : 1/4 cup
Baking soda                                          : a pinch
Sugar                                                     : 1/2tsp
Salt
Oil



Method

In a wide bowl add maida, rava , baking soda , salt ,sugar and mix well.
Add soda water and knead well. 



Add 1 or 2 tbsps of soda water if needed.
Cover it with a wet cloth and keep aside for 15 to 20 minutes.
Heat oil in a frying pan / Kadai.
Divide the dough into lemon sized balls, roll it.
When the oil is hot, gently slip one bhatura into it and fry till golden brown in colour.

Serve hot with Quick Green Peas Curry made with Besan flour








Instant Ragi & Wheat flour dosa






Ingredients

Ragi flour                        : 1 cup
Wheat flour                     : 1 cup
Rava                                : 1 tbsp
Chopped green chillies    : 2 tsp
Grated ginger                   : 1/4 tsp
Grated coconut                 : 2 tbsps
Cunin seeds : 1 tbsp
Pepper corns : 1 tsp
Coriander leaves
Curry leaves
Salt
oil

Method

Mix all the ingredients well except oil, add enough water to make thin batter. 
Heat a non stick pan, rub some oil , drizzle a ladle of batter on to the hot tawa.
Pour some oil around the corners, let it cook till the edges turn brown.
Flip over and let the other side cook.
Fold the dosa and remove from flame.
Serve hot with coconut chutney..

Sambar vadai / சாம்பார் வடை



Ulundu Vadai recipe 

Ingredients

Urad dal : 1 cup
Raw rice : 1 tsp
Chopped onion : 1/4 cup
Green chillies : 2 nos
Grated ginger : 1/4 tsp
Salt
Asafoetida
Curry leaves
Oil 

Method

Wash & soak urad dal and rice for 2 to 3 hours.
Strain it completely and grind along with green chillies,salt,ginger for 45 minutes.
Sprinkle water if necessary.
Once done,remove from grinder ,add curry leaves,asafoetida and mix well.
Heat oil in a kadai, take a banana leaf or plastic cover ,wipe it with water,take a little amount of urad dal mixture,spread and make a little hole in the middle, take it out from the leaf / cover , add it in the hot oil.
Slowly flip the vadai to the other side and let it fry.
Once the vadai becomes golden brown,remove from oil.




Tiffin sambar recipe 

Ingredients

Cooked toor dal : 3/4 cup
Small Onion : 8 to 10 nos
Tomato : 1
Carrot : 1
Tamarind water : 1/4 cup
Red chilly : 2 nos
Salt
Coriander leaves
Mustard seeds
Curry leaves
Oil

To grind

Coconut : 1 1/2 tbsp
Tomato : 1
Fried gram dal : 1 tbsp
Sambar powder : 2 tsps 

Method

Chop the onion ,carrot,tomato and keep aside.
Heat oil in a kadai, add mustard seeds, broken red chilly, curry leaves and fry.
Add carrot ,tomato and fry for few minutes.
Add salt, sprinkle little water and let the carrot cook until soft.
Grind all the ingredients mentioned under 'to grind' to a fine paste and keep aside.
Add tamarind water ,coconut paste,cooked dal and mix everything well.
Let the sambar boil for 5 to 8 minutes.
Garnish with coriander leaves and serve hot.


Sambar vadai recipe 

Soak the vadain hot water for few minutes.
Gently squeeze the vada , arrange in serving bowl.
Add hot sambar over it and serve hot...

Yellow Pumpkin Curry / Kaddu ki Sabzi - Side dish for Poori / Chapathi ( no onion / no garlic)



Ingredients

Yellow Pumpkin                   - 1 cup ( peeled & chopped)
Red chilly powder                 - 1 tsp
Amcoor Powder                     - 1 tsp
Coriander Powder                  - 1/2 tsp
Garam masala powder           - 1 tsp
Turmeric powder                   - 1/4 tsp
Jaggery powder                     - 1/4 tsp
Mustard seeds
Fenugreek seeds
Cumin seeds
Asafoetida
Salt
Oil



Method 

Heat 2 tsp oil in a kadai , add 1/2 tsp mustard seeds, 1/4 tsp fenugreek seeds, 1/4 tsp cumin seeds and let them splutter.
Now add the chopped pumpkin cubes and mix well.
After few minutes add all the powders ,asafoetida ,  jaggery , salt and mix well.
Add 1/4 cup water , mix , cover and cook on low flame for 10 minutes.
Mash the pumpkins slightly , mix well and remove from flame.
Serve hot with Poori / Chapathi

Aloo Palak - Side dish for Roti / Chapathi ( with step by step pictures)







Ingredients 

Palak                                  : 1 bunch
Boiled potato                     : 5
Onion                                 : 2
Tomato                               : 2
Green chillies                     : 5
Garlic pods                         : 3
Ginger                                 : 1/2 inch
Cumin seeds                        : 1tsp
Garam masala powder         : 1/4 tsp
Salt
Ghee 

Method


                                                              Heat 1 tsp ghee in a pan

                                              
                                                           Add garlic, ginger & fry

                   



                                                           add 3 green chillies & fry

      

Add chopped one onion and fry



Now add washed & chopped spinach


                                                         add salt and mix


                                                             
                                                add little sugar to retain the colour and mix well

                                                  

                                                     cook well until spinach shrinks

            
                                         
                                                      tranfer to a mixie jar and let it cool


      

                                                           Blend to a smooth paste 



                      Heat 1 tbsp oil , roast the boiled potatoes with little salt and keep aside



                                       
                                          Heat 2 tsp ghee in a pan , add cumin seeds , 


                                                          green chillies and fry

                                             
                                         chop the remaining one onion and add  to the pan


                                          add chopped tomatoes , little salt and fry for few minutes.



                                                 now add the spinach puree , 1/4 cup water and mix


                                               
                                           now add garam masala , mix everything well and let it boil for few                                                        minutes on low flame.


                                                 
                                             Finally add the roasted potato, and mix well. 
                                            


                                  remove from flame and serve hot with chapathi / roti

Aamras Recipe / Aamras with Poori / Alphonso Aamras






Ingredients

Alphonso Mangoes              : 2 ( ripe)
Sugar                                 : 1 tsp
Cardamom powder            : a pinch


Method

Wash , peel and cut the mangoes.
Put the mango cubes in a blender , add cardamom powder , sugar and blend to make a smooth puree.
Serve with hot pooris..

Thenga Manga Pattani Sundal / தேங்காய் மாங்காய் பட்டாணி சுண்டல்




Ingredients

Dried Green peas            : 1 cup

Raw mango           : 2 tbsp ( peeled and chopped)
Grated coconut     : 3 tbsps cup
Green chillies       : 2 nos
Red chilly             : 1
Grated ginger       : 1/2 tsp
Mustard seeds
Urad dal
Curry leaves
Salt
Asafoetida
Oil 



Method

Wash and soak green peas in water for 8 hours / overnight .
Pressure cook it with little salt for 5 whistles.
Heat oil in a kadai,add mustard seeds, urad dal and curry leaves.
When mustard start to crackle,add chopped green chillies,Broken red chilly, curry leaves,ginger and asafoetida.
Now add cooked green peas ,salt and mix well.
Finally add grated coconut, chopped raw mango and stir for few minutes.
Serve..

750th Post - Apple Jalebi





750 it is !!




Ingredients

Apple                                          : 1
Maida / All purpose flour          : 1 tbsp
Corn flour                                  : 1 tbsp
Butter                                         : 1tsp
Baking soda                               : a pinch
Sugar                                          : 1tbsp
Salt                                             : a pinch
Saffron                                        : 10 threads
Oil
Almonds


For Sugar syrup

Sugar                                            : 1 cup
Water                                            : 3/4 to 1 cup
Cardamom powder



For garnishing

Pista : 2 tbsps
Almonds : 2 tbsps


Method

Take maida , corn flour , salt , baking soda in a bowl and mix well.
Add water , mix without lumps, make a thick and smooth batter.
Soak saffron in little water for few minutes.
For the sugar syrup ,combine 1 cup sugar, 1 cup water, safforn water in a kadai and boil on low flame for 10 minutes or until the syrup is slightly thick and sticky and keep aside.
Add cardamom powder to the syrup and mix well.
Peel the apple , slice it into thin round slice and remove the seeds.( scoop out the seeds)
Heat oil in a kadai , dip one apple slice in maida batter and deep fry them till golden brown colour.
Drain and keep aside.
Place the apple jalebis in sugar syrup , soak for 2 minutes and transfer it to a serving plate.
Garnish with sliced almonds and pistachio and serve immediately..







Plums Rasam / பிளம்ஸ் ரசம்










Ingredients

Plums                                       : 5
Tomato                                     : 2
Cooked toor dal                       : 1/4 cup
Rasam powder                         : 1tsp    ( Recipe here )
Pepper - cumin powder           : 1 tsp
Curry leaves
Coriander leaves
Ghee
Mustard seeds
Salt
Ghee
Asafoetida




Method

Combine 1/2 cup water , plums in a pan and bring to boil for 3 - 4 minutes.
Allow it to cool.
Peel the skin , remove the seed , chop into pieces and add it to the same boiled plums water.
Chop the tomato , mash it with your hands and add.
Add rasam powder, freshly ground pepper - jeera powder , salt , turmeric powder and bring it to boil.
After few minutes ,add the cooked dal , some more water to it and mix.
Garnish with coriander leaves, let it boil for 2 more minutes and remove from flame.
In a kadai , heat 1 tsp ghee and temper with mustard seeds , curry leaves and broken red chilly,
Add it to the rasam , mix and serve hot.

Instant Mango Chutney ( Sweet and Spicy )



Ingredients

Raw mango              - 1/2 cup ( grated)
Jaggery                    - 1 tbsp
Red chilli powder    - 2 tsp
Oil                           - for tempering
Salt
Asafoetida 
Mustard seeds



Method

In a mixie jar ,add grated raw mango , red chilly powder, jaggery , salt and grind to a smooth paste.
Transfer it to a bowl.
Heat oil in a pan ,add mustard seeds ,asafoetida and allow it to splutter.
Add this tempering to the chutney , mix and keep it refrigerated.
Serve with roti..
