Multi coloured Bread Sandwich/Toast

Ingredients

Wheat Bread slices : 7
Mixed fruit jam  : 2 tbsps
Mint leaves        : 1/2 cup
Coriander leaves : 1/2 cup
Green chillies      : 3
Lemon juice        : 1 tsp
Grated carrot      : 1/2 cup
Grated paneer     : 1/2 cup
Grated cheese     : 1/2 cup
Grated cucumber : 1/2 cup
Salt
Pepper powder
Butter

Green chutney

Grind mint leaves, coriander leaves ,green chillies and salt. Mix lemon juice with it and keep aside.


Method

Toast the bread slices on tawa or a toaster with little butter.
Mix grated carrot, grated cucumber, grated cheese , greated paneer and add salt and pepper to it. mix well and keep aside.
There are 7 bread slices to be used in one toast/sandwich
Put one bread slice on a plate, spread a layer of jam, cover it with second bread slice spread green chutney on it, cover it with 3rd bread slice put vegetable mixture , again cover it with spreaded jam bread, next spreaded chutney bread, and again with vegetable mixture on another bread and finally cover the whole slices with butter spreaded bread slice.
Press gently, cut into desired shape and serve with tomato sauce.

Banana Peel Pancake

Ingredients

Banana Peels   : 1 cup
Oats                : 1/2 cup
Wheat flour     : 1/2 cup
Milk                : 1/2 cup
Finely chopped Dates  : 1/4 cup
Honey             : 2 tbsps
Butter              : 1 tbsp

Method

Grind banana peels using little  milk and keep aside.
Mix oats, wheat flour, chopped dates and milk.
Put mashed banana peels to the milk mixture and mix well.
Heat a tawa , apply some butter on it.
Use 1/4 cup of the batter per pancake and pour into the tawa.
Fry over low heat on one side until light brown and turn to the other side and cook until done.
Finally drizzle some honey on the pancakes and serve hot..

Mushroom & Cabbage Briyani

Ingredients

Cooked Rice              : 2 cups
Chopped Mushroom  : 1 cup
Chopped Red Cabbage : 1/2 cup
Chopped onion             : 1/2 cup
Chopped tomatoes        : 1/4 cup
Curd ( yogurt)               : 2 tbsps
Green chillies                : 2
Red chilly Powder        : 1 tsp
Coriander powder        : 1 tsp
Ginger - garlic paste     : 1 tsp
Cinnamon
Cardamom
Cloves
Oil
Salt
Coriander leaves
Mint leaves

Method

Heat oil in a pan add cinnamon, cardamom. cloves one by one.
Then add chopped onions, chopped green chillies and fry well.
Now add chopped tomatoes and ginger- garlic paste and stir well.
Put red chilly powder, coriander powder and salt mix well.
Now add curd and mix .
Add chopped mushroom , chopped red cabbage and mix well.
Close the lid and let it cook.
When mushroom and red cabbage gets cooked add cooked rice and mix well.
Garnish with coriander leaves and mint leaves.

Pumpkin ( yellow) peel Kheer

Ingredients
 
Fresh & Tender small pumpkin peel  : 1 cup
Milk                                                 : 3 cups
Sugar                                               : 1 cup
Ghee                                                : 2 tbsps
Cardamom
Cashewnuts

Method

Wash & Grind the pumpkin peels with little Milk.
Boil milk.
Heat a pan, add ghee and fry the pumpkin peel paste for a few mins till the raw smell goes .
Add the paste to the boiling milk.
Cook for 5 mins.
Add sugar and mix well.
Let it boil till the kheer reduces a bit.
Turn off the flame and add cardamom powder.
Garnish with fried cashewnuts and saffron.
