Karunai Kizhangu Masiyal / கருணைக்கிழங்கு மசியல்




Ingredients

Karunai kizhangu    : 2 nos
Cooked toor  dal      : 1 tbsp
Tamarind water        : 2 tbsps
Grated coconut         : 1 1/2 tbsps
Grated ginger            : 1/2 tsp
Green chillies            : 3 nos
Mustard seeds
Asafoetida
Salt
Curry leaves
Red chilly 
Oil



Method

Wash and pressure cook the karunai kizhangu for 4 whistles.
Allow it to cool, Peel the skin and mash well. 
Add it to the tamarind water along with turmeric powder,asafoetida,salt and let it boil till the raw smell of tamarind goes away. 
Grind coconut,ginger,green chilly to a fine paste.
Add the coconut paste,cooked toor dal to the boiling mixture and mix well.
Cook well until it reaches masiyal consistency..
Heat 1 tbsp oil in a kadai,add mustard seeds ,1 broken red chilly,curry leaves and fry.
Add it to the masiyal and mix.

Ulundu Vadai / Medhu Vadai / உளுந்து வடை



Ingredients

Urad dal        : 1 cup 
Raw rice        : 1 tsp
Chopped onion  : 1/4 cup
Green chillies     : 2 nos
Grated ginger     : 1/4 tsp 
Salt
Asafoetida 
Curry leaves
Oil




Method

Wash & soak urad dal and rice for 2 to 3 hours.
Strain it completely and grind along with green chillies,salt,ginger for 45 minutes.
Sprinkle water if necessary.
Once done,remove from grinder ,add curry leaves,asafoetida and mix well.
Heat oil in a kadai, take a banana leaf or plastic cover ,wipe it with water,take a little amount of urad dal mixture,spread and make a little hole in the middle, take it out from the leaf / cover , add it in the hot oil. 
Slowly flip the vadai to the other side and let it fry.
Once the vadai becomes golden brown,remove from oil.
Enjoy..

Note : Skip the onion if you are making for pooja.

Eggless Achu Muruku /அச்சு முறுக்கு /Rose Cookies / Achappam







Ingredients

Rice flour           : 1 cup 
Powdered sugar : 1/2 cup
Maida                 : 1/4 cup 
Water                 :1/2 to 1 3/4 cup 
Salt                     : a pinch 
Oil



Method

Let the achu murukku mould sit in oil for 1/2 an hour.
Mix rice flour,maida,powdered sugar,salt together , add water and mix everything well.
Heat oil in a kadai,  
Dip the mold into the batter. 
The batter should only cover three fourth of the mold. 
Place it in hot oil, slightly shake the mould.
The murukku will slide into the oil.
Flip to other side and cook until done.
Let it cool and store in in an air tight container. 
Enjoy.
