Rasam Vada/ Rasa Vadai / ரச வடை




What do you do when you are so tired to cook? My go-to-too tired/lazy/etc method is online food ordering through  Foodpanda . So click, order and Enjoy..Now coming to Today's Recipe Rasa Vada, this is a popular south indian snack. This is a very quick and intereting recipe...




Ingredients 

For Urad dal Vada / Medu Vada 

Urad dal    : 1 cup
Salt
Oil 
Curry leaves 



Method

Wash & soak urad dal for 1 hour. 
Strain the dal and grind it to a smooth paste with required salt.
Add curry leaves to it and mix well.
Heat oil in a pan,wet your hands with water,take lemon sized batter,make a hole in the centre,slowly drop it into the hot oil and fry both sides to a golden brown colour. 

Ingredients for the Rasam 

Garlic pods : 4
Tomato : 2 ( big)
Pepper : 1 tsp
Red chilly : 1
Cumin seeds : 1tsp ( 1/2 + 1/2 )
Toordal : 1/2 tsp
Mustard seeds : 1/2 tsp
Oil : 1tsp
Curry leaves
Coriander leaves
Salt
Asafoetida

Method

In a mixie jar,add pepper, 1/2 tsp cumin seeds,red chilly,toor dal,garlic pods and powder it coarsely.
Heat oil in a kadai,add mustard seeds,cumin seeds ,when it sizzles add the powdered masala and fry for few minutes.
Now add chopped tomatoes,salt,curryleaves,asadoetida and stir.
Now add 2 cups water,turmeric powder and reduce the flame.
When it starts frothing , add coriander leaves,mix and switch off the flame. 

Take a wide bowl,d
rop the vadas in rasam ,allow it to soak for 5 minutes, drain and transfer to another bowl.
While serving add some more rasam on top and serve Hot..

Ingredients For the Filling 

Grated coconut   : 1 cup
Jaggery               : 3/4 cup  
Cardamom powder
Ghee                 : 1 tsp

Method

Heat a pan add jaggery ,1 tbsp water and mix.
Strain it,add grated cconut and ghee to it ,mix well and keep it in the flame.
Stir well continuously till it roll like a ball.
Remove from fire and let it cool.

Ingredients for Kozhukattai mavu  

Raw Rice   : 1 cup
Oil
Salt

Method

Wash & Soak rice in water for 1 hour.
Drain the rice and spread it in a clean cloth for 10 minutes.
Grind the rice to a fine powder.
Sieve twice and keep aside.
Boil 1/2 cup water in a pan with little salt & 1/2 tsp oil.
When the water starts to boil,add 1/2 cup rice flour,mix well and remove from fire.
Knead it well and cover it.

Grease Steel Chapati maker with little oil.


Take lemon size dough ,make it into round shape,flatten it between the palms to make little disc.  



Place it on the chapati maker , close the upper plate and press.



The dough has now been rolled into the shape of a little poori. 



Add 1 tsp Pooranam / filling in the middle 



And close it. 

 


Steam cook for 5 to 8 minutes. 



Remove Gently & Serve....

Panner Fudge With Just 2 Ingredients



Ingredients 

Paneer  : 1/2 cup ( Homemade Paneer Recipe Here )
Condensed milk   : 1/4 cup + 1 tsp ( Homemade Condensed Milk Recipe Here)



Method 

Knead paneer into a soft dough.
Combine the paneer, condensed milk and mix well.
Keep stirring the mixture over medium heat.
When the mixture begins to leave the side of the pan switch of the flame. 
Allow it to cool.
Grease a plate with little ghee or butter.
Transfer the mixture into the grease plate and cut into pieces. 
Using nuts or Saffron are optional.
Place in the fridge for 2 hours or freezer for few minutes. 
Serve..





Potato Chips / Homemade Potato Chips / உருளைக்கிழங்கு சிப்ஸ் செய்வது எப்படி?



Ingredients 

Potatoes            : 4
Salt                    : 1 tbsp
Water                 :  3 tbsps
Oil for frying


Method

Dissolve salt in water and keep aside.
Remove the skin of the potatoes  and  keep them in water.
Heat oil in a kadai ,slice the potatoes directly into the oil using slicer.
Or slice them separately and slide into the oil.
Pour 1 tbsp salt water into the oil and let it fry till golden brown colour.
Drain well and serve.
