Apple Pulao



Ingredients

Basmati rice       : 1 cup
Chopped apple    : 1/2 cup
Cashewnuts 
Shahi jeera
Bay leaf
Cinnaon stick
Cloves
Nutmeg powder
Salt
Ghee


Method

Wash and soak rice for 10 minutes.
Heat 2 tsp ghee in a pan,add shahi jeera,bay leaves, cinnamon stick,cloves and saute for a minute.
Add soaked rice in it and stir.
Add 1 1/2 cup water,salt to it and mix and let it cook on low flame. 
Once done switch off the flame ,add nutmeg powder ,chopped apples,mint leaves and gently mix.
Fry cashewnuts in little ghee and add it to the rice.
Serve hot with peas curry. 


Oats Cutlet/Oats Tikki



Ingredients

Oats           : 1 cup
Cooked & mashed potato   : 1/4 cup
Red chilly powder        : 3/4 tsp
Pav bhaji masala         : 3/4 tsp 
Cumin powder            : 1/4 tsp
Coriander leaves 
Salt
Oil for shallow frying


Method

Dry roast oats and grind into coarse powder.
Mix with mashed potato and add red chilly powder,pav bhaji masala,cumin powder,salt,coriander leaves to it .
Divide the mixture into 10 - 12 equal portions,and shape them into round.
Heat a tawa and shallow fry it with little oil.
Serve hot with tomato ketch up.


Chinna Vengaya Chutney/Shallots chutney



Ingredients

Small onions          : 1 cup
Garlic pods            : 3
Red chilly              : 7
Tamarind              : 1 pinch
Salt
Oil


Method

Heat 1 tsp oil in a kadai,add red chillies,onions,garlic pods,tamarind and fry till raw smell goes off.
Remove from fire and let it cool.
Grind the mixture with salt to a smooth paste.
Serve with hot and crispy dosa..

Broken Wheat & Moong Dal Dosa



Ingredients

Broken wheat          : 1 cup
Moong dal               : 3/4 cup
Red chilly                 : 4
Green chilly              : 4
Grated ginger           : a pinch 
Chopped onion         : 2 tbsps
Curry leaves
Salt
Oil



Method

Soak cracked wheat & moong dal seperately for 1 hour.
Grind dal,craked wheat,red chillies,green chillies.salt,grated ginger to a smooth batter.
Add onion and curry leaves to the batter and mix well
Heat a tawa,take the batter in a laddle,spread it into a thin circle.
Add oil,flip to other side and cook for few minutes.
Serve hot with any chutney.

Carrot & Green peas Stir Fry / Carrot Pattani Curry / Poriyal



Ingredients

Chopped carrot    : 1 cup
Frozen green peas   : 1/4 cup
Grated coconut        : 2 tbsp
Oil                           : 1 tsp
Mustard seeds
Urad dal
Red chilly  1
Green chilly  1
Curry leaves
Salt


Method

Heat oil in a pan,add mustard seeds,when they splutter ,add urad dal,broken red chilly,chopped green chilly ,curry leaves and fry.
Add carrot ,peas,salt and sprinkle some water,cover and let it cook on low flame.
Once cooked add grated coconut,mix well and remove from fire.
Serve hot.. 


Simple & Quick Garam Masala Rice



Ingredients

Basmati Rice   : 1 cup 
Water              : 1 1/4 cup
Green cardamom   : 2
Cinnamon stick      : 1
Cloves                   : 3
Pepper corns         : 1/2 tsp 
Ghee                      : 2 tsp
Bay leaves
Mint leaves
Coriander leaves



Method

Wash & soak rice for 20 minutes.
Heat ghee in a heavy bottomed pan,add bay leaves,pepper corns,cinnamon stick,Cardamom,cloves and fry for few minutes.
Add soaked rice and fry.
Add water, salt and mix well,close the lid and let it cook on low flame.
Simple & quick garam masala rice is ready. 
Garnish with mint leaves..
Serve hot with any side dish of your choice..

Paruppu Podi



Ingredients

Toor dal         : 1 cup
pepper corns  : 1 tsp
Red chilly       : 2
Salt
Asafoetida

Method

Dry roast toor dal to golden brown colour.
Dry roast red chilly & pepper corns seperately .
Allow them to cool.
Blend dal,roasted pepper & chilly,salt,asafoetida to a coarse powder.
Store it in a air tight container.
Serve with hot rice & gingelly oil / ghee.


Pepper Banana Chips



Ingredients 

Raw bananas    : 2
Salt
oil
Pepper powder


Method

Peel off the skin from bananas and keep it in water.
Heat oil in a pan,slice the bananas into the oil directly.
Mix salt and 1 tbsp water and add it to the oil.
Once done,remove from oil and drain on kitchen paper towels.
Sprinkle freshly ground black pepper powder over the chips,mix well and serve.. 



Murungai kai Kootu / Drumstick Kootu



Ingredients

Moong dal   : 1 cup
Drumsticks  :  5 nos
Salt

To Grind 

Coconut     : 2 tbsps
Green chillies  : 4
Jeera              : 1/4 tsp
Rice                : 1/4 tsp



To Temper

Coconut oil    : 1 tsp
Mustard seeds
Urad dal
Jeera
Curry leaves
Red chilly          : 1 

Method

Soak moong dal for 20 minutes.
Chop drumstick into medium size pieces and cook along with moong dal with salt.
Grind coconut ,green chillies,jeera,rice to a smooth paste.
To the cooked drumstick and dal mixture add the ground paste and mix well.
Bring it to boil for few minutes.
Switch off the fire and temper with the given Ingredients.
Serve with Hot tomato rasam ..



How to Make Curd / Homemade Curd / Yogurt/Thayir



Ingredients

Milk               : 1/2 ltr
Curd              : 1/2 tsp



Method

Bring milk to a boil.
Remove from fire,transfer to a container and allow it to cool.
When milk is lukewarm,add curd to the milk and mix well.
Cover the container and allow it to set for 6 hours.
Curd / Yogurt is now ready to serve. 





Rava Upma



Ingredients

Rava/Sooji/Semolina         : 1 cup
Water                               : 2cups
Chopped onion                 : 2 tbsps
Green chillies                    : 4 
Red chilly                         : 1
Curry leaves
Salt
Mustard seeds
Urad dal
Chana dal
Oil



Method

Dry roast rava in a pan for few minutes and keep aside.
Heat oil in a pan,add mustard seeds and allow it to splutter.
Add urad dal,channa dal and fry.
Put chopped green chillies,broken red chilly, curry leaves and fry.
Add chopped onion to it and stir.
Now add 2 cups of water and salt to it  and bring to boil.
Add the roasted rava slowly,a little at a time,stir continuously to avoid forming lumps.
Close the lid and let it cook on medium flame till done.
Serve hot with coconut chutney..




Carrot & Capsicum Rice / Pulao ( No onion No Garlic)



Ingredients

Cooked Basmati Rice    : 1 cup
Grated carrot                 : 1/2 cup
Chopped capsicum        : 1/4 cup
Coriander seeds             : 1 tsp
Chana dal                       : 1/2 tsp
Red chillies                     : 4 
Cloves                            : 2 
Cardamom                      : 1 
Cumin seeds                    : 1/2 tsp
Oil
Salt
Coriander leaves



Method

Dry roast coriander seeds,chana dal,red chillies,cloves ,cardamom for few minutes,cool down and powder it.
Heat oil in a pan,fry cumin seeds .
Add grated carrot and stir.
Put chopped capsicum to it and fry.
Add salt and mix.
Add the powdered masala,cooked rice and mix everything well.
Remove from fire and serve Hot with Cucumber raita.



Murungai Keerai Adai / Drum Stick Leaves Adai




Ingredients

Drumstick Leaves    :  1 cup ( Remove the leaves from stem,wash & keep aside)
Boiled rice      -  1 1/4 cup
Toor dal         - 3/4  cup
Channa dal    - 1/2  cup
Urad dal        - 1 tbsp
Red chillies    - 8
Onion            - 2
Grated Coconut         - 1/2 cup

Salt
Curry leaves 
Oil 




Method  

Wash and Soak rice and dal separately and grind together coarsely with salt and red chillies. 
Add grated Coconut, chopped onion and curry leaves. 

Add drumstick leaves now and mix everything well.
Heat dosa tawa, pour 1 ladle of batter and spread as round. 
Put oil on sides and cook both sides till crispy. 
Serve with any side dishes like butter, jaggery, avial or idly milagai podi. 



Idli Upma



Ingredients

Idlis      : 10 ( Recipe Here) 
Chopped Onion    ; 1/2 cup
Chopped Green chillies   : 2 tbsps
Turmeric powder
Salt
Oil
Asafoetida
Curry leaves
Mustard seeds
Urad dal


Method

Crumble  the idlis and keep aside.
Heat oil in a pan,add mustard seeds.
When they crackle,add urad dal,green chillies,curry leaves and fry till they become golden brown.
Add chopped onion ,turmeric powder and fry for few minutes.
Put crumbled idlis now ,add little salt to it and mix everything well.
Cook for few minutes and remove from fire..
Serve hot...:)


Hot Gulab Jamun with Chilled Ice Cream - Classic Combo 4

Vanilla Ice cream     : 2 Scoops
Chopped nuts 




Method

Slightly squeeze out the syrup from the jamun and keep aside.
Take 2 scoops of vanilla ice cream in a serving bowl, put jamun on top of the ice cream.
Garnish with chopped nuts.
Yummmmyyy....:-) 



350 th Post - Dates & Nuts Ladoo ( Without Ghee & Sugar )

Ingredients 

Chopped Dates   : 1 1/2 cup
Cashew nuts       : 1/4 cup
Almonds             : 1/4 cup
Melon Seeds       ;  1 tbsp
Pistachios            : 1/4 cup
Poppy seeds       : 2 tbsps
Cardamom powder 



Method

Dry roast poppy seeds for few minutes and keep aside.
Grind dates coarsely in a mixer and keep aside.
Dry roast cashewnuts,almonds, melon seeds,pistachios for few minutes and grind coarsely.
Mix dates,nuts powder,cardamom powder and combine everything well and Knead into a dough and shape them into small ladoos.
Roll the ladoos in poppy seeds.
Store in an air tight container...




Kozhukattai Payasam / Paal Kozhukattai - Ganesh Chathurthi Recipe



Ingredients

Milk        : 2 cups
Sugar      : 1 cup

Cardamom powder  
Saffron 



Method

Make small balls from the dough and steam cook it for 10 minutes.
Remove the balls and keep aside.
Soak saffron in little milk.
Boil milk in a heavy bottomed pan.
Once the milk comes to a boil,add the cooked kozhukattai to it and simmer the flame.
Let it boil for 10 minutes.
Add sugar now and let it boil for few minutes.
Add saffron,cardamom and mix well.
Serve hot. 




Mothagam / Modakam / Ganesh Chathurthi Recipe



Ingredients For the Filling / Pooranam

Grated Coconut   : 1 cup
Grated Jaggery     : 1/2 cup
Cardamom powder
Ghee                   : 1 tsp

Method

Heat a pan,add jaggery and 1 tbsp water and mix.
Strain it ,add grated coconut to it,mix well and keep it in the flame.
Stir well continuously till it roll like a ball.
Remove from fire and let it cool.

Ingredients for Kozhukattai Maavu

Raw rice       : 1 cup
Oil
Salt

Method

Soak raw rice in water for 1 hour.
Drain the rice and spread it in a clean cloth for 10 minutes.
Grind the rice to a  fine powder.
Sieve twice and keep aside.
Boil 1/2 cup Water in a pan with little salt and 1/2 tsp oil.
When the water starts to boil, add 1/2 cup rice flour,mix well and remove from fire.
Knead it well and cover it.
Take lemon sice dough,make small cup and add 1 tsp pooranam/filling in the midle and close it.
Steam cook for 5 to 8 minutes.
Remove gently and Serve.
