Lacha Paratha



Ingredients 

Wheat flour            : 2 cups
Water                    : 3/4 cup
Ghee                      : 2 tbsp
Salt




Method

Mix wheat flour & salt ,add water and knead until a soft dough is formed.
Keep aside for 1/2 an hour.
Divide the dough into equal balls.
Roll it thinly into flat round circle.
Apply 1/2 tsp oil over it and spread evenly.
Fold the dough,  start creating pleats by folding with the help of fingers and stretch it .
Dust the rolling surface with flour, flatten each dough .
Heat a tawa, fry each paratha until brown,flip and cook the otherside,drizzle some oil.
Serve with any Kurma or curry of your choice. 



Nellikai Sadam / Gooseberry Rice



Ingredients

Grated Gooseberry          : 1 cup
Cooked rice                     : 2 cups
Red chilly                         : 2 
Green chilly                      : 2 
Peanuts                            : 2 tbsps 
Urad dal                          : 1 tsp
Mustard seeds                 : 1/ tsp
Grated ginger                   : 1/4 tsp
Oil                                   : 2 tsp
Salt
Curry leaves 




Method

Heat oil in a pan,add mustard seeds ,urad dal, chopped green chillies,broken red chillies,peanuts and fry till they are brown in colour.
Add grated gooseberry ,salt and fry till raw smell goes away.
Finally add the cooked rice and mix well.
Serve with raita  and any chips. 


Mangai Pachadi ( Sweet)



Ingredients 

Raw mango slices     : 1 cup
Jaggery                    :  1 cup
Oil                           ; 1 tsp
Mustard seeds         : 1/2 tsp
Red chilly                 : 1 
Salt                          : a pinch


Method

Cook mango slices till tender with a pinch of salt.
Add grated jaggery to it and let it cook on low flame until becomes thick.
Season it with mustard seeds and broken red chilly.
Serve hot.


Eggless Instant ( 2 minutes) Microwave Chocolate Cake



Ingredients

Maida : 3 tbsp
Sugar : 3 tbsp
Oil : 3 tbsp
Milk : 3 tbsp
Cocoa powder : 1 1/2 tbsp
Baking soda : a pinch
Salt : a pinch



Method

Add maida,sugar,salt,baking soda,cocoa powder in a Microwve safe mug and mix well.
Add oil,milk ,mix well and make sure there are no lumps.
Microwave it for 2 minutes.
Serve it with Vanilla ice cream ..
Enjoy..



Basic Whole Wheat Bread



Ingredients  

Wheat flour              : 2 cupsDry Yeast                :  1 tbspOil                           ; 2 tbsps Salt LukeWarm Water            : 1/2 cupHoney                      : 1 tbsp



Method

Mix flour, salt, yeast. honey, water and knead gently.
Dust the working surface with little flour and knead the dough for 3 mins. 
Transfer the dough into a bowl and cover with a towel and let it rise for 1 hour .
Remove it from the bowl and again knead for few mins and shape it into a log.
Put the dough into a greased loaf pan, cover it and let it rise for another 1hour.
Preheat the oven at 180 C for 10 mins and bake for 25 mins.
Remove the bread from oven and place on a rack to cool.
Freshly baked whole wheat vegan bread is ready.

Omam Vatha Kuzhambu



Ingredients

Tamarind water        : 2 cups
Sambar powder       : 1 1/2 tbsps
Omam / Ajwain        : 1 tsp
Gingelly oil                : 2 tbsps
Salt
Curry leaves
Mustard seeds
Asafoetida

 





Method

In tamarind water , add sambar powder,asafoetida,salt and keep aside.
Heat 11/2 tbsp oil,temper with mustard seeds,curry leaves.
Add tamarind mixture now.
Let it boil on low flame.
Heat remaining 1/2 tbsps oil in an another pan , add omam / ajwain,as this splutters add this to the  simmering kuzhambu & mix.
Let it boil for another few minutes.
Remove from fire & Serve with hot rice.



Pani Puri / Golgappa



Ingredients

For Puri 

Sooji / Rava          : 1 cup
Maida                   : 1/4 cup
Salt
Oil for frying

Mix flour,sooji,salt and make a dough by adding required water.
Roll it and cut into small circles using a cutter.
Heat oil in a pan and deep fry them on low flame till crisp.



For filling 

Boiled & mashed potato        : 1 cup 
Cooked channa                     : 1 cup
Chopped onion                      : 1/2 cup
Coriander leaves
Salt



For Pani 

Water       : 4 cups
Jaljeera powder   : 2 tbsps
Coriander leaves   : 1/2 cup
Mint leaves           : 1 /2 cup
Chopped ginger    : 1/2 tsp
Green chilly           : 1 
Sugar                    : 1 tsp


Method 

Grind together mint leaves,coriander leaves,green chilly .ginger to a fine paste. 
Mix with water and add jaljeera powder,sugar to it and refrigerate for sometime.

Serving Method 

Take a puri,make a small hole on the top, put potato, 3 to 4 channa, 1/4 tsp onion inside the puri .
Sprinkle some sev on top.
Pour pani in the stuffed puri ,serve and eat immediately.

Idli Milagai Podi



Ingredients 

Urad dal  : 1 cup 
Chana dal  : 2 tbsps
Red chillies  :  25 to 30 nos
Sesame seeds  : 2 tbsps
Asafoetida      ; 1/4 tsp
Salt
Oil 


Method

Roast sesame seeds separately and keep aside.
Roast urad dal,chana dal,red chillies with 1/2 tsp oil till golden brown and let it cool.
Grind chiilies,salt and asafoetida first and then add other ingredients and grind  to a fine powder.
Store in an air tight container.
Serve with Idli or Dosa..


Batura /Chole Batura /Chola Poori/Maida Poori



Ingredients

All purpose Flour / Maida          : 2 cups
Curd                                         : 3/4 to 1 cup
Baking soda                              : 1/4 tsp
Sugar                                       : 1 tsp
Salt
Oil to deep fry



Method

Mix all the ingredients except oil and keep aside for 1 1/2 hours. 
Heat oil in a frying pan / Kadai.
Divide the dough into  lemon sized balls, roll it.  
When the oil is hot, gently slip the bread into it and fry till golden brown colour. 
Serve hot with Chana Masala. 






Cauliflower Pulao / Rice



Ingredients 

Cooked basmati rice   : 2 cups
Cauliflower  ( separated into Florets ) :  1 cup  
Ginger-Garlic paste     : 1 tsp
Chopped onion           : 1/2 cup 
Chopped tomatoes     : 2 tbsps
Garam masala powder  : 1 tsp
Red chilly powder         : 1 tbsp
Cumin seeds                 : 1 tsp 
Ghee + oil                    : 2tbsps
Coriander leaves 
Salt  



Method 


Heat oil + ghee in a pan,add cumin seeds.
Add chopped onion,ginger-garlic paste and fry for few minutes.
Put tomato,Cauliflower florets,salt and let it cook till done.
Add garam masala powder, red chilly powder and stir.
Add cooked rice and mix gently.
Cover and cook for few minutes on low flame.
Garnish with coriander leaves...

Serve with  Raita.. 



Eggless Coconut Macaroons



Ingredients 

Unsweetened Shredded coconut   :  3 cups
Maida / All purpose flour              :  3/4 cup 
Sugar                                           : 1 cup
Baking powder                             : 1 tsp
Salt                                               : a pinch
Milk                                              :  1/4 cup 



Method 

Preheat oven to 150 C.
Mix all ingredients until well blended.  
Place 1 tbsp of coconut mixture on a baking sheet and bake for 15 to 20 minutes.
Cool on a wire rack and store.
Enjoy.. 






Aval Dosa / Poha dosa



Ingredients 

Idli Rice        : 2 cups
Poha / Aval   : 1 cup 
Fenugreek seeds  : 1/2 tsp
Salt
Oil 



Method 

Wash & Soak rice ,poha and fenugreek seeds for 2 hours.
Grind it to make a smooth batter.
Add salt to it ,mix well .
Keep aside overnight to ferment.
Mix the batter well before using.
Heat a dosa tawa and make dosa.
Apply oil around it ,cover and cook on low flame.
Serve with Vadacurry... 










Eggless Peanut Butter Cookies - Valentine's Day Special 2



Ingredients 

Maida         : 1 cup
Butter          : 1/4 cup
Peanut butter  : 1/2 cup
Sugar           : 1 cup
Baking powder  : 1/2 tsp
Baking soda      : 1/2 tsp
Milk                  : 2 tbsps
Salt  


Method 

Preheat oven to 150 C.
Beat butter,sugar,peanut butter well for 10 minutes.
Sieve maida,baking powder, baking soda and salt for 2 times .
Add the flour to the butter mixture and mix everything. 
Add milk and mix until dough forms. 
Cut dough into desired shapes with cookie cutter,place on a baking sheet lined with parchment paper and bake for 10 minutes.
Cool it on a wire rack & serve.



Rose Milkshake - Valentine's Day Special 1



Ingredients 

Chilled Milk        : 1 cup
Rose syrup         : 1 tbsp 
Sugar                 : 2 tbsps
Ice cubes           :  4 
Vanilla ice cream :  1 scoop 



Method

Blend everything in a blender.
Pour it in a glass.
Garnish with rose petals...
Serve.
