Idli/Dosa Batter Bonda



Ingredients

Idli/Dosa Batter       : 1 cup
Rava                       : 2 tbsps
Rice flour                : 4 tbsps 
Chopped onion       : 2 tbsps
Chopped green chillies  : 1 tbsp
Grated ginger           : 1/4 tsp
Salt
Coriander leaves
Curry leaves 
Oil for frying




Method

Mix all ingredients well ( except oil). 
Keep aside for 20 minutes.
Heat oil in a kadai, drop small balls in the oil and deep fry them till golden brown.




Onion - Tomato Pachadi for Idly / Dosa



Ingredients 

Tomato ( chopped)  : 3 nos
Onion ( chopped)   : 1
Red chilly powder  :1 tsp
Turmeric powder   : 1/4 tsp
Oil              : 1 tbsp
Salt 
Mustard seeds
Curry leaves



Method

Heat oil in a kadai,add mustard and curry leaves.
Wait till mustard crackles,add chopped onion and fry.
Add chopped tomato and salt now and mix.
Put red chilly powder now and cook on low flame till oil comes out separately.
Serve with idly / dosa...



Hayagreeva Muddy - 300th Post

Ingredients 

Chana dal    : 1 cup

Grated jaggery   : 1 cup
Ghee                 : 1/4 cup 
Grated coconut   : 1/4 cup
Cardamom powder
Cashewnuts 



Method

Wash and soak channa dal for 1 hour and pressure cook upto 3 whistles.

Heat a heavy bottomed kadai boil jaggery with little water and strain to remove impurities. 
After few minutes,add cooked chana dal,grated coconut to it and let it boil.
Cook on a low flame ,keep stirring until the moisture is absorbed completely.
Heat ghee in a another pan,fry cashew nuts till golden brown and ad it to the mixture.
Add cardamom powder and mix everything well.
Remove from fire and serve hot. 




Ginger - Cardamom Tea



Ingredients 

Milk        : 1 cup 
Grated ginger : 1 tsp
Cardamom    : 2 
Sugar            : 1 tsp  
Tea powder   : 1 1/2 tsp

Method

Boil milk,add tea powder,sugar,ginger,crushed cardamom .
Let it boil on a low flame for few minutes.
Filter it using a tea strainer .
Hot tea is ready.

Keerai masiyal



Ingredients 

Keerai / Spinach    : 1 bunch
Sugar                    : 1/2 tsp
Oil                        : 1 tsp
Mustard seeds      : 1/2 tsp 
Cumin seeds         : 1/2 tsp
Urad dal               : 1/2 tsp
Red chilly             : 1 
Salt
Asafoetida 


Method 

Wash the keerai well for few times.
Drain it and chop roughly.
Cook with salt,sugar and add little water to it.
Once done ,mash it using a  mathu or blend it in a blender.
Heat oil in a kadai,add mustard seeds, cumin seeds and allow it to pop,add urad dal,broken red chilly and asafoetida. 
Add it to the cooked keerai and mix well.
Delicuous,my fav Keerai masiyal is ready.



Masala Kuzhi Paniyaram



Ingredients

Idly/Dosa Batter  : 1 cup
Copped onion     : 1/4 cup
Grated carrot      : 2 tbsp
Grated ginger      : a pinch
Chopped green chillies  :  1 tbsp
Coriander leaves      
Curry leaves
Salt
Oil 



Method

Mix everything except oil well.
Heat a paniyaram pan,add oil,pour the batter in each mould and let it cook.
Turn and cook the other side too.
Serve hot with any chutney.. 




Tomato - Carrot Dosa



Ingredients 

Idly rice   : 1 cup
Tomatoes : 4 

Grated Carrot  : 1/2 cup
Red chillies  : 4
Salt
Oil 



Method 

Soak rice for 3 hours and grind along with chopped tomatoes,Grated Carrot,  red chillies and salt smoothly.
Heat a Tawa, pour a laddle of batter and make like normal dosa,apply oil and cook on medium heat.
When it is cooked turn to the other side and cook until done.
Serve hot with coconut chutney. 



Instant Oats Paniyaram



Ingredients

Oats         : 1 cup
Rice flour  : 2 tbsps
Rava         : 1 tsp
Sour curd  : 3/4 cup
Grated ginger : 1/4 tsp
Chopped green chilly  : 1 tsp
Salt
Oil
Mustard seeds
Chana dal



Method

Put oats,rice flour,rava,salt,ginger Green chilly in a bowl and add sour curd and mix well. 
If the batter is thick add water and mix.
Heat 1/2 tsp oil in a frying pan, add mustard seeds and chana dal.
Add the tempering to the batter, mix well and keep aside for 15 minutes.
Heat a paniyaram pan,add oil,pour the batter in each mould and let it cook.
Turn and cook the other side too.
Serve hot with any chutney...


Republic Day Special - Tricolour Idly



Ingredients

For red idly

Idly batter   : 1/2 cup
Carrot         : 1 small
Tomato sauce : 1 tsp
Salt

Method

Steam cook carrot with little salt & grind to a smooth paste.
Add the carrot paste,tomato sauce to the idly batter,mix well and make idly.



For Green idly

Ingredients

Idly batter  :1/2 cup
Green chutney  : 11/2 tbsp ( recipe here )
Lemon juice     : few drops ( this will retain the green colour)

Mix green chutney,lemon drops and idly batter well and make idly..

Saffron Pulao/ Rice



Ingredients 

Basmati rice    : 1 1/2cups
Saffron           : 1/4 tsp
Ghee              : 2 tbsps
Cashewnuts    : 2 tbsps 
Raisins            : 2 tbsps 
Milk               : 1/4 cup 
Chopped onion  : 1/4 cup
Bay leaves  
Salt 

Method 

Soak saffron in lukewarm milk.
Wash and soak basmati rice for 1/2 an hour.
Heat ghee in a kadai ,fry cashewnuts and raisins and keep aside. 
Fry onions and keep aside.
Add bay leaves and rice to the remaining ghee and fry.
Add 2 cups water, safron milk ,salt and mix well.
Cover with lid and cook on low flame till done. 
Add fried cashews,raisins and onion and mix everything well.
Serve with any side dish of your choice... 



Eggless Condensed Milk Cinnamon Cake



Ingredients 

Maida       : 1 1/2 cups
Homemade Condensed milk : 1 cup ( recipe here)
Sugar                 : 1/2 cup
Baking powder   : 1 tsp
Baking soda       : 1/2 tsp
Salt                    :  a pinch
Oil                     : 1/4 cup
Milk                  : 1/4 cup
Cinnamon powder : 1/2 tsp
Vanilla essence      : 1  tsp 


Method 

Preheat the oven to 200 C.
Sieve maida,Baking powder,Baking soda ,salt together 3 times and keep aside.
Mix condensed milk,plain milk,oil well.
Add sugar to it and mix well till sugar dissolves completely. 
Add vanilla essence ,cinnamon powder and mix.
Now add the sieved flour little by little to the milk mixture and blend gently. 
Reduce the heat to 180C.
Pour the batter into a greased pan and bake for 25 minutes. 
Once done cool it on a wire rack .

Nei Kizhangu/Sweet sakkaravalli Kizhangu/Candied sweet potato/Sweet potato in Ghee & Jaggery Syrup



Ingredients 

Sweet Potatoes      : 3 nos
Jaggery                  : 1 cup
Ghee                     : 2 tbsps
Salt                        : a pinch
Cardamom powder 


Method

Wash the sweet potatoes well.
In a heavy bottomed pan, add chopped sweet potatoes, ghee, salt and grated jaggery.
Add 1/4 cup water & let it cook on low flame.
When kizhangu is fully cooked ,add cardamom powder, mix well and switch off the flame.
Serve hot or cold.

Homemade Condensed Milk



Ingredients 

Milk powder    : 1 cup
Sugar               : 3/4 cup
Water              : 1/2 cup
Butter              : 1 tbsp


Method

Add sugar, butter,Water in a pan and boil on low flame .
When it comes to a boil,remove it from heat.
Add milk powder and mix.
Use a whisk to stir it smooth.
Allow it to cool slightly and blend until smooth.
Store it in an airtight container in the refrigerator... 
Easy to make condensed milk is ready.. 


Upma Kozhukattai / Pidi Kozhukattai



Ingredients 

Raw rice   : 1 cup
Water       : 2 cups
Grated coconut   : 1/4 cup
Red chilly            : 2 
Green chilly         : 2
Curry leaves
Mustard seeds
Asafoetida
Oil 
Salt



Method

Grind raw rice to a fine rava consistency.
Heat oil in a pan, add mustard seeds ,then broken red chillies,green chillies,curry leaves,asafoetida one by one.
Add water,salt and let it boil.
When water just comes to a boil,put rice and coconut ,mix well ,lower the flame and let it cook.
Once the rice cooked ,switch off the flame.
Spread the mixture on a plate and let it cool.
Take about 2 tbsps of the rice mixture,roll it into a cylindrical shape and steam it for 10 minutes.
Serve with  Kathirikai/Brinjal Kothsu... 




Gobi 65



Ingredients 

Cauliflower   : 1 
Besan flour   : 1 tbsp
Corn flour          : 2 tbsps
Thick curd        : `1 1/2 tbsps
Ginger-Garlic paste  : 1/2 tsp
Red chilly powder   : 1 tsp
Salt 
Oil 



Method 

Separate the cauliflower into big pieces,immerse in  the boiling water for few minutes.
Drain it and keep aside.
In a large bowl mix all the ingredients together ( except oil) and add cauliflower pieces to  it and mix well.
Heat oil in a kadai, fry the florets till golden brown colour. 
Serve hot.. 

How to make Paneer at Home



Ingredients 

Milk        : 1 litre
Lemon juice  : 1 tsp


Method 

Boil milk & simmer for few minutes.
Add lemon juice to it and keep stirring until the whey completely separates.
Switch off the fire.
Place a fine cloth over a container and strain  it.
Tie the cloth & hang it to a sink tap for 2 hours to let the whey completely drain out.
Flatten it and place it on a flat tawa and keep any heavy weight over it and allow it to set for 2 to 3 hours.
Remove the cloth and cur into shapes.
Store in a air tight container. 





Tomato Rasam



Ingredients 

Cooked & mashed toor dal      : 2 tbsps
Dal water                 : 1/2 cup
Tomatoes                 : 3
Tamarind water         : 1/2 cup
Rasam powder          : 1 tbsp ( recipe Here
Mustard seeds          : 1/2 tsp
Cumin seeds             : 1/2 tsp
Ghee                        : 1 tsp
Curry leaves
Coriander leaves
Asafoetida
Salt



Method

Boil tamarind water with salt,asafoetida,chopped toamtoes,turmeric powder and rasam powder,allow it to boil till the tomatoes gets mushy.
Add dal water,mashed dal and some more water to it.  
Let the rasam boil for few minutes
Heat ghee in a pan, add mustard seeds,cumin seeds,curry leaves one by one,whey they splutter  pour it over the rasam.
Garnish with coriander leaves and serve with hot rice.
