Paasi parupu Sundal /Moongdal Sundal




Ingredients

Moongdal         : 1 cup
Grated coconut : 1/2 cup
Green chillies    : 2 nos
Grated ginger    : 1/2 tsp
Mustard seeds
Urad dal
Curry leaves
Salt
Asafoetida
Oil

Method

Soak moongdal for 1 hour.
Cook them with little water.Add salt to it while boiling.
You need to be able to mash them with your fingers. It is enough to cook.
Heat oil in a kadai,add mustard seeds, urad dal and curry leaves.
When mustard start to crackle,add chopped green chillies,curry leaves,ginger and asafoetida.
Now add cooked moong dal and mix well.
Finally add grated coconut and stir for few minutes.
Serve..




Simple Mixed Vegetable Sabzi.



Ingredients

Chopped potato     : 1/2 cup

Chopped Carrot  : 1/2 cup 
Cauliflower          : 1/2 cup
Baby corn            : 1/4 cup
Green peas           : 1/4 cup
Sweet corn           : 1/4 cup
Chopped Onion     : 1/2 cup
Tomato             : 2 nos
Green  chilly      : 1
Red chilly powder   : 1 tbsp
Ginger - Garlic paste   : 1 tsp
Curd ( yogurt )    : 1/4 cup
Coriander Powder  : 1 tsp
Garam masala powder  : 1 tsp
Cinnamon
Cloves 
Coriander leaves
Salt
Oil  





Method

Cook the vegetable until tender.
Mix chilly powder, garam masala powder, coriander powder, ginger- garlic paste, salt , green chilly, chopped tomatoes with curd .
Add cooked vegetables with that curd mixture and keep aside for 1/2 an hour. 
Heat oil in a kadai and add cloves, cinnamon and chopped onions to it.
Saute well.
Then add curd mixture to it.
let them cook for 5 mins till oil separates .
Garnish with Coriander leaves and serve with Roti or Naan.. 




Filter Coffee



Ingredients

Coffee powder    : 2 tbsps
Water                 : 3/4 cup
Milk                    : 1 cup
Sugar                  : 1 tsp


Method

Add coffee powder to the upper container of the coffee filter.
Allow water to boil.
Add hot water to the filter and close immediately.
Wait for 5 minutes and allow dicoction to drip in lower container..
Now the decoction is ready to use.
Boil milk.
Pour little decoction in a serving tumbler, add milk and sugar.
Serve hot and frothy...




Bonda Soup



Ingredients for Bonda

Urad dal   : 1 cup
Finely chopped coconut : 2 tbsp
Chopped green chilles    : 1 tbsp
Salt
Curry leaves
Asafoetida

Method

Soak dal for 1 hour and grind to a very smooth paste  without adding water.
Add salt, curry leaves, coconut pieces,green chilly, asafoetida and mix well.
Heat oil , Take about lime size of the batter and put it in the oil and fry till golden brown.
Keep it aside.



For soup Ingredients

Toor dal    ; 1/2 cup
Green chillies  : 4
Grated ginger : 1 tsp
Turmeric powder
Salt
Coriander leaves
Lemon juice
Ghee
Mustard seeds


Method

Pressure cook  dal along with turmeric and mash it well
Heat 1 tsp ghee in a pan , add mustard seeds, green chillies, grated ginger.
Now add cooked dal ,1cup water and  let it boil.
Add salt to it.
Finally add coriander leaves and remove from flame.
Add lemon juice and mix well.
While serving take the hot soup in a bowl and add the fried bondas.
Serve hot...








Adai Dosa ( mixed Lentil Crepes)



Ingredients

Idly Rice       : 1 cup
Toor dal        : 1/2 cup
Chana dal     : 1/4 cup
Urad dal       : 1/4 cup
Moong dal    : 1/4 cup
Small onion   : 1/4 cup
Cococnut      : 1/2 cup
Red chilly      : 5 nos
Ginger           : a small piece
Asafotida
Salt
Curry leaves
Oil


Method

Soak rice and dals separately for 3 hours.
Grind rice and dals together along with chopped onion, salt, red chillies,ginger to a smooth paste.
Add grated coconut, curry leaves, asafoetida to the batter and mix well.
Heat a tawa , spread a ladle full of batter and make a dosa.
Pour oil along the edges and some in the middle too.
Flip over and cook the other side for few minutes.
When both sides are done take it out from the fire and serve hot with any chutney.

Eggless Marble Cake


Ingredients  

All purpose Flour/ Maida    : 1 cup

Butter                                 : 1 cup
Condensed Milk                 : 1 cup
Baking powder                   : 1 tsp
Baking soda                          : 1 tsp
Vanilla essense                    : 1 tsp
Cocoa powder                       : 3 tbsps
Salt                                       : a pinch





Method 

Preheat oven to 200 C for 10 minutes.
Sieve Maida, Baking powder and Baking soda together.
In a large bowl add butter,condensed milk, vanilla essense and mix well.
Add flour little at a time and keep mixing.
Make sure there is no lumps.
Pour 1/2 amount of batter into the greased baking tin.
Add cocoa powder to the remaining batter and gently mix.
Pour the cocoa mixture over it and briefly swirl the mixture together with a fork to get a marble effect.
Bake fro 40 minutes.
Cool the cake on a wire rack.. 
Serve..

Chana Biryani / Chana Pulao



Ingredients 

Cooked Basmati  Rice              : 2 cups
Cooked chana            : 1 cup
Chopped onion             : 1/2 cup
Chopped tomatoes        : 1/4 cup
Curd ( yogurt)               : 2 tbsps
Green chillies                : 2 
Red chilly Powder        : 1 tsp
Coriander powder        : 1 tsp 
Ginger - garlic paste     : 1 tsp 
Garam masala powder  : 1 tsp
Cinnamon
Cardamom
Cloves
Oil
Salt
Coriander leaves
Mint leaves




Method 

Heat oil in a pan add cinnamon, cardamom. cloves one by one. 
Then add chopped onions, chopped green chillies and fry well.
Now add chopped tomatoes and ginger- garlic paste and stir well.
Put red chilly powder, coriander powder,garam masala powder and salt mix well. 
Now add curd and mix .
Add cooked chana and stir...
Close the lid and let it cook.
Add cooked rice and mix well.
Garnish with coriander leaves and mint leaves. 
Serve with any raita... 




Paneer Masala Dosa



Ingredients

For the dosa Batter

Idly rice     : 3 cups
Raw rice    : 1 cup
Urad dal    : 1 cup
Salt

Method 

Wash and Soak Rice and dal seperately for 4 hrs.
First grind dal to a very smooth paste.. ( for best results grind dal for 45 mins)
Grind Rice near to coarse consistency.
Add salt and mix well.
Keep the batter aside over night..


Ingredients For the stuffing


Grated Paneer : 2 cups
Chopped onion : 1/2 cup
Chopped tomato : 1/4 cup
Chopped green chillies : 1 tbsp
Red chilly powder : 1 tsp
Garam masala powder : 1 tbsp
Ginger - Garlic paste : 1 tsp
Salt
Oil
Coriander leaves



Method

Heat oil in a kadai add onion and saute.
Add tomatoes, green chillies, salt and mix well.
Now add ginger - garlic paste and stir.
Add all the spice powders and fry for few minutes until oil leaves the sides.
Add grated paneer, mix well and cook for 2 minutes and remove from flame.
Garnish with coriander leaves.

Making the Dosa



Heat a Tawa ,spread one ladle of dosa batter evenly.
Apply ghee or oil around the edges and Wait for few minutes ..
Spread 2 tbsps of paneer filling and fold the dosa .
Now the dosa is ready to be served... 






Bhel Puri



Ingredients

Puffed rice    : 2 cups
Chopped onion : 1/2 cup
Grated carrot    : 1/2 cup
Boiled and cubed potatoes  : 1/2 cup
Finely chopped tomatoes  : 1/2 cup
Chopped cucumber          : 1/4 cup
Sev                                  : 1/2 cup
Roasted peanuts               : 1/2 cup
Chat masala powder        : 1/2 tbsp
Red chilly powder            : 1/4 tsp
Chopped coriander          : 1 tbsp
Chopped mint leaves        : 1 tbsp
Salt

Green chutney

Coriander leaves      : 1 cup
Mint leaves              : 1/2 cup
Green chillies           : 4
Lemon juice             : 1/2 tsp
Salt

Combine all the ingredients in a blender and blend it to a smooth paste.

Dates & Tamarind chutney

Dates     : 10 nos
Tamarind  : 1 tbsp
Jaggery     : 1 tbsp
Salt
Red chilly powder : 1/2 tsp

Add everything in a pan and cook for 20 to 25 minutes.
Cool and grind to a smooth paste.

Method 

In a wide bowl Mix together the puffed rice, chopped onion, tomatoes,carrot, potato, salt , peanuts and cucumber..
Sprinkle red chilly powder, chat masala powder and mix.
Add 2 tbsps of tamarind chutney and 3 tbsps of dates chutney and mix.
Sprinkle sev and coriander leaves and serve immediately..








Dangar Pachadi / Urad dal Raita



Ingredients

Urad dal      : 1/4 cup
Thick curd    : 1 cup
Musard seeds
Red chilly   : 1
Oil
Salt
Asafoetida

Method

Dry roast urad dal till golden brown.
Let it cool and grind to a fine powder.
Beat curd well and add urad dal powder and mix.
Add salt to it and blend thoroughly..
Heat oil in pan ,add mustard seeds, broken red chilly, curry leaves and asafoetida.
Add the seasoning to the curd mixture and mix well.

Puli Aval / Tamarind Poha


Ingredients

Aval / Poha      : 1 cup
Tamarind juice : 1/2 cup
Red chillies       : 4 nos
Peanuts             : 2 tbsps
Cashewnuts      : 2 tbsps
Chana dal         : 1 tsp
Urad dal           : 1 tsp
Curry leaves
Mustard seeds
Salt
Turmeric powder
Gingelly Oil
Asafotida

Method

Wash the poha twice.
Soak it in tamarind water with salt and turmeric powder for half an hour.
Heat oil in a pan, add mustard, chana dal, urad dal, broken red chillies, curry leaves,Asafoetida and fry.
When mustard splutters add peanuts and cashewnuts and fry for few minutes.
Now add the soaked aval / poha and blend everything well.
Switch off the flame and garnish with some nuts and curry leaves.





Simple Homemade Chocolates


Ingredients

Sugar         : 1 cup
Milk powder : 1 cup
Cocoa powder  : 1/4 cup
Water                : 1/2 cup
Butter                : 1 tbsp

Method

Mix milk powder and cocoa powder and keep aside.
Mix water and sugar in a heavy bottomed pan and allow it to boil until it reaches 1 string consistency.
Remove from fire and add butter and mix well.
Now add milk powder mixture to it.
Mix everything well for few minutes..
Pour the mixture on a greased plate and allow it to cool.
Cut them into squares..




Sooyan/Sukiyan/Suzhiyam / Sweet Balls ( using leftover kozhukattai filling/puranam)



Ingredients 

For the Batter 

Raw Rice     : 1 cup
Urad dal      : 1/4 cup
Salt              : a pinch

For the filling

Grated coconut   : 1 cup
Jaggery               : 1/2 cup
Cardamom powder : 1 tsp

Oil for deep frying


Method

Soak rice and dal together for 2 hours.
Grind to a very smooth paste and add salt to it.
Dissolve jaggery in 1/4 cup of water and drain it.
Mix coconut and jaggery water in a heavy bottomed pan stir on low flame until the mixture comes together.
Switch off the flame and add cardamon powder.
Roll them into small balls and keep aside.
Heat oil in kadai, dip each ball in the prepared batter, put it in oil and fry until golden brown.




Vegetable Puffs with Homemade Pastry Sheets



Ingredients for Pastry sheets

Maida / All purpose flour      : 2 cups
Cold water                           : 3/4 cup
Butter                                   : 1 cup
Lemon juice                          : 1 tsp
Salt



Method

Mix flour and salt in a wide bowl.
Add 2 tsps of butter and mix.
Add lemon juice and water ,knead into a soft dough.
Cover and refrigerate for 1/2 an hour.
Flour the rolling surface, roll out the dough into a  rectangle shape.
Spread butter and fold the four edges and again refrigerate.
Remove the dough from refrigerator and Gently roll the dough into a rectangle.
Fold 3 times like Business letter and repeat the process for 5 to 6 times.
Cover with plastic Wrap and refrigerate.
Now the pastry is ready to use.


Ingredients for the filling

Boiled Mixed vegetables    : 1 cup ( i used carrot, beans, green peas)
Chopped onion       : 1/2 cup
Chopped tomatoes  : 1`/4 cup
Red chilly powder   : 1 tsp
Garam masala powder : 1/2 tsp
Coriander powder  : 1 tsap
Pav Bhaji masala    : 1 tsp
Jeera                     : 1/2 tsp
Salt
Oil
Coriander leaves


Method  

Heat oil in a pan, add jeera , onions and fry.
Add tomatoes and masala powders and saute.
Add salt and mix well.
Put cooked vegetables and mix well .
Garnish with coriander leaves and remove from fire.

Assembling puffs

Preheat oven to 200C for 10 minutes.
Cut the pastry sheets into equal parts.
Stuff each piece with stuffing and close it firm.
Bake for 20 minutes or till the top is golden brown.
Serve hot.







Paneer Peas Pulao



Ingredients 

Cooked Basmati Rice : 2 cups
Frozen green peas       : 1 cup
Ginger - Garlic paste   : 1 tbsp 
Cubed Paneer             : 3/4 cup
Chopped onion          : 1/2 cup
Chopped Tomato        : 2 tbsps
Chopped Green Chilly : 1 tbsp
Garam masala              : 1 tbsp
Pav Bhaji Masala         : 2 tsps
Cumin seeds                 : 1 tsp
Ghee + oil                     : 2 tbsps
Salt
Coriander leaves 




Method 

Heat oil + Ghee in a wide kadai, add cumin seeds and green chillies.
Add chopped onion, ginger - garlic paste and fry for few minutes.
Add tomato, green peas and salt and let it cook. 
Toast paneer with little oil Separately.
Add garam masala powder, pav bhaji masala and saute for 2 minutes on low flame.
Add boiled rice and toasted paneer and  mix gently.
Cover and cook for few minutes .
Garnish with coriander leaves.  




Mango Trifle Pudding



Ingredients 

Mango puree    : 2 cups
Strawberry Custard powder  : 2 tbsps
Sponge cake      : 1 ( cubes)
Chopped nuts    : 3 tbsps


Method 

Prepare custard as per the instructions in the pocket.
Take a Glass cup  start layering the trifle.
Spread cake cubes on the bottom and press it firmly.
Pour strawberry custard over it.
Now add 1 tbsp of chopped nuts.
Then pour the mango puree and finally garnish with fried Almonds.
Refrigerate for 3 hrs  and serve chilled..

Capsicum & Peas Tawa Pulao





Ingredients 

Cooked Basmati Rice : 2 cups
Chopped Capsicum    : 1/2 cup
Frozen green peas       : 1 cup
Ginger - Garlic paste   : 1 tbsp
Chopped onion          : 1/2 cup
Chopped Tomato        : 2 tbsps
Chopped Green Chilly : 1 tbsp
Garam masala              : 1 tbsp
Pav Bhaji Masala         : 2 tsps
Cumin seeds                 : 1 tsp
Ghee + oil                     : 2 tbsps
Salt
Coriander leaves

Method

Heat oil + Ghee in a wide kadai, add cumin seeds and green chillies.
Add chopped onion, ginger - garlic paste and fry for few minutes.
Add tomato, green peas and salt and let it cook.
Now add capsicum and stir.
Add garam masala powder, pav bhaji masala and saute for 2 minutes on low flame.
Add boiled rice and mix gently.
Cover and cook for few minutes .
Garnish with coriander leaves.

Fried Ice Cream






Ingredients

Vanilla ice cream       :  4 scoops
Bread                       : 8 slices
Oil

Method  

Trim the crust of the bread .
Put one scoop of ice cream on a bread slice ,cover with another bread slice, roll it into a ball.
Once it's completely covered freeze it for 2 hours.
Heat oil in pan, drop the balls one at a time .
Fry them carefully for few minutes.
Serve immediately.
Enjoy ..



Whole Wheat Oatmeal Flaxseed Dates Pancake ( Eggless)





Ingredients 

Whole wheat flour : 1 cup
Oatmeal                : 1/2 cup
Milk                      : 1 cup
Flaxseed               : 1 tbsp
Sugar                    : 2 tbsps
Cinnamon powder : 1/4 tsp
Nutmeg powder    : 1/4 tsp
Salt                       : a pinch
Chopped Dates     : 3 tbsps
Sliced Almonds     : 2 tbsps
Ghee / Olive oil  

Method 

Dry roast oatmeal and powder it.
Mix oats powder, wheat flour, flaxseed , cinnamon powder, nutmeg powder,salt,sugar together.
Add milk and mix until it forms a thick and pourable consistency.
Heat a frying pan, pour 1/3 cup batter onto the pan, spread ghee/ olive oil around the pancakes, place chopped dates and sliced Almonds over the top .
Flip the pan cake to other side and cook for few more minutes until golden brown.
Top with honey or butter and serve hot.

Peanut Butter & Banana & Jam Sandwich



Ingredients 

Multi Grain Bread        : 8 slices
Peanut Butter               : 1 cup
Unsalted Butter            : 2 tbsps
Mixed fruit Jam            : 2 tbsps
Ripe bananas sliced      : 1 cup

Method 

Mix plain butter & Peanut butter.
Spread 4 bread slices with butter mixture and top with Banana slices.
Spread the remaining slices with mixed fruit jam and cover them on top of the bananas.
Press them gently.
Place each sandwich on a tawa and toast both sides for few minutes and serve immediately.
