Ulundu Vadai / Medhu Vadai / உளுந்து வடை



Ingredients

Urad dal        : 1 cup 
Raw rice        : 1 tsp
Chopped onion  : 1/4 cup
Green chillies     : 2 nos
Grated ginger     : 1/4 tsp 
Salt
Asafoetida 
Curry leaves
Oil




Method

Wash & soak urad dal and rice for 2 to 3 hours.
Strain it completely and grind along with green chillies,salt,ginger for 45 minutes.
Sprinkle water if necessary.
Once done,remove from grinder ,add curry leaves,asafoetida and mix well.
Heat oil in a kadai, take a banana leaf or plastic cover ,wipe it with water,take a little amount of urad dal mixture,spread and make a little hole in the middle, take it out from the leaf / cover , add it in the hot oil. 
Slowly flip the vadai to the other side and let it fry.
Once the vadai becomes golden brown,remove from oil.
Enjoy..

Note : Skip the onion if you are making for pooja.

Eggless Achu Muruku /அச்சு முறுக்கு /Rose Cookies / Achappam







Ingredients

Rice flour           : 1 cup 
Powdered sugar : 1/2 cup
Maida                 : 1/4 cup 
Water                 :1/2 to 1 3/4 cup 
Salt                     : a pinch 
Oil



Method

Let the achu murukku mould sit in oil for 1/2 an hour.
Mix rice flour,maida,powdered sugar,salt together , add water and mix everything well.
Heat oil in a kadai,  
Dip the mold into the batter. 
The batter should only cover three fourth of the mold. 
Place it in hot oil, slightly shake the mould.
The murukku will slide into the oil.
Flip to other side and cook until done.
Let it cool and store in in an air tight container. 
Enjoy.

3 Minutes Microwave Mysorepak .





Ingredients

Besan Flour : 1/2 cup
Ghee : 1/2 cup
Powdered Sugar : 1 cup
Milk : 2 tbsps

Method 


Melt ghee in a microwave for one minute.
Mix besan flour, sugar and milk to the ghee and mix.
Microwave it for 3 minutes ( Remove in between and mix)
Once you see bubbles forming on the mixture, remove pour over a greased plate.
Allow it to cool and cut into pieces.
Enjoy .. 



500th Post - Eggless Microwave Oreo Cake

Ingredients

Oreo Biscuits  - 15 nos
Milk                - 100 ml
Baking powder  : 1/4 tsp



Method

Powder the biscuits in mixie jar.
Add milk and baking powder to it and grind to make a smooth paste.
Grease a microwave safe bowl with oil and pour the mixture.
Put int the microwave for JUST 3 minutes.
Take out from the MW and let it cool for 10 minutes.
Slice into pieces.
ENJOY




Chocolate Fudge in Microwave - So delicious and So Chocolaty




Ingredients

Semi sweet Chocolates    : 1/2 cup 
Condensed milk  : 1/2 cup - 1 tsp
Butter                 : 1 tbsp


Method

Microwave the chocolates ,sweetened condensed milk, and butter for 2 minutes, stirring once or twice during cooking. 
Remove from it and mix everything well.
Spread in a butter greased plate and refrigerate until set. 



Adhirasam / அதிரசம்



Ingredients

Raw Rice          : 1/2 kg
Jaggery              : 1/2 kg
Cardamom         : 6 nos
Dry ginger powder   : 1 tsp
Ghee                         : 1 tbsp
Oil


Method

Wash & Soak the rice for an hour and dry it in shade.
Powder it in mixie with cardamom pods.
Melt the jaggery and make a syrup of 3 thread consistency. 
Add dry ginger powder,ghee to the jaggery syrup and mix.
Slowly add the rice flour and mix everything well till you get chapathi dough consistency.
Keep this dough aside for one full day.
Next day knead the dough once again.
Heat oil in a kadai, take a small ball from the dough, place it in a greased plastic or butter paper,press it with any lid or any flat vessel to make flat.
Gently take it out and fry in the oil.
Fry till golden brown and remove from oil, gently press it with an another ladle to squeeze out the excess oil.
Let it cool and store it in an air tight container.

Oats Uthappam



Ingredients

Oats         : 1 cup
Wheat flour  : 1 tbsp
Curd              : 1/2 cup
Finely chopped onion : 1 cup
Chopped green chilly : 1 tbsp
Curry leaves
Coriander leaves
Oil 


Method

Grind oats to a coarse powder and put into a bowl. 
Add wheat  flour,curd, salt and sufficient water to make a batter .
In a bowl mix onion,curry leaves,green chilly,coriander leaves and keep aside.
 Heat a dosa tawa,Pour a laddle of batter ,slightly spread it to form a thick dosa.
Sprinkle 4 tbsps of onion mixture all over the dosa,apply 1 tsp oil around the dosa and cover it.
Flip to other side,drizzle some oil again,once done remove from tawa.
Serve hot with coconut chutey.. 


Coriander Dosa / Kothamalli Dosa




Ingredients

Dosa Batter      : 1 cup
Coriander Chutney  : 1 tbsp ( Recipe here  ) 

Method

Heat tawa , Pour 1 ladle of dosa batter in the middle and spread it in a round shape.
Pour oil around the dosa and spread some coriander chutney on it and cook on low flame.
Cook till the dosa turns golden brown and fold it .
Serve hot..

Ginger & Tulsi Tea



Ingredients

Grated Ginger   : 1/2 tsp
Tulsi leaves      : 6 nos
Tea powser       : 13/4 tsp
Sugar                : 3/4 tsp


Method

Boil 1 cup water with grated ginger,tulsi leaves,tea powder and sugar.
When it starts boiling ,switch off the flame. 
Strain into a serving cup and enjoy.

Home made Khova / Khoya / Mawa / Unsweetened Khoya / How to make Homemade Khoya




Ingredient

Full Cream Milk   : 1/2 ltr

Method 



                                                 Take a non stick pan, bring milk to boil.





                                             lower the flame and Keep stirring scraping the sides.
                                                 

                                                  This is how it looks after 20 minutes


                                             And after 30 minutes. At this time stir continuously 


                                                keep stirring till it becomes solid like this



                                At this time remove from fire , let it cool & refrigerate it.  




Potato Murukku / Aloo Murukku




Ingredients

Boiled Potato      : 1 ( medium size)
Rice flour            : 1 cup
Butter / ghee        : 1 1/2 tbsps
Asafoetida           : a pinch
Cumin seeds        : 1/4 tsp
Salt
Oil

Method


                                                              Grate the potato


                                                         Add it to a wide bowl.



                                                                Add rice flour,




                                                                         Salt,


                                                            Asafoetida,



                                                     Butter and Cumin seeds to it




                                       Mix everything well and knead like a firm dough using little water.



                                                                        Take a small portion, 


                                 Fill the greased Murukku Achu (Murukku Maker ) with that dough,Squeeze it out 





                     Press the Murukku achu on a greased plate and gently drop into hot oil. 


                                                     Cook on medium flame till crisp..
