Potato Fry

Ingredients

Chopped potatoes  : 2 cups
Sambar powder or Red chilly powder   : 3 tbsps
Turmeric powder    : 1/2 tsp
Asafotida                : 1/4 tsp
Salt
Oil                          : 3 tbsps
Curry leaves

Method

Heat oil in a kadai add asafotida, curry leaves and turmeric powder.
Then the chopped potatoes and mix well.
Put salt and mix well.
When potato half cooked put sambar powder or red chilly powder and mix well.
Cover the kadai with lid and let it cook till done.
Serve hot with any sambar rice or chapathi..
Simple recipe but tastes great..

Mango peel Dip

Ingredients

Mango peels    : 1 cup
Fresh curd ( yogurt)  : 3/4 cup
Chilly powder      : 1 tsp
Cumin powder     : 1 tsp
Salt

Method

Grind the mango peels.
Mix with curd , chilly powder , cumin powder and salt.
Serve chillied .
I served it with Red capsicum, Sliced carrot, sliced banana, chopped zucchini and with biscuits.

Ladies Finger Pepper Fry



This is a very easy & simple recipe.. This goes very well with Sambar rice.

Ingredients

Chopped ladies Finger  : 1 cup
Pepper powder             : 1 1/2 tbsp
Oil                                : 2 tsp
Salt

Method

Heat  oil in a pan,put chopped ladies finger and salt.
Saute well till half cooked.
Sprinkle the pepper powder over the ladies finger and mix well.
Let it cook for 5 mins.
Serve hot.

Coconut Rice / Burmese style / Ohn Htamin

Ingredients

Rice    : 1 cup
Coconut milk : 2 cups
Mixed vegetable ( chopped) : 1/2 cup ( carrot, beans and peas)
Chopped onion  : 1/2 cup
Cinnamon
Cloves
Bay leaves
Oil
Salt

Method

Wash & soak the rice for 10 mins.
Put the rice in a rice cooker / pressure pan.
Add coconut milk, salt, oil, cinnamon, cloves,bay leaves,chopped onion and chopped vegetables..
Cover it with the lid and cook till done.
Garnish with coriander leaves, mint leaves and fried cashewnuts.

Mango - lemon skin panakam ( jaggery drink)

Ingredients

Jaggery   : 1 cup
Raw mango                 : 1/4 cup ( grated)
Raw mango skin          : 1 tbsp
Lemon skin                 : 1/2 tsp  ( grated)
Dry ginger powder      : 1/2 tsp
Cardamom                 : 1/2 tsp ( crushed)
Water                        : 2 cups

Method

Dissolve the grated jaggery in water and filter it.
Add dry ginger powder, cardamom , lemon skin , grated mangoes ,grated mango skin with jaggery water and mix well.
Serve chilled.

Rava Kitchadi

Ingredients

Roasted Rava   : 1 cup
Mixed vegetables  : 1 cup ( carrot, potato, green peas, beans )
Cooked geen gram dal  : 1/4 cup
Chopped onion    : 1/2 cup
Chopped tomato  : 1/4 cup
Green chillies       : 5
Chopped Ginger  : 1/4 tsp
Ghee                   : 2 tbsp
Mustard
Curry leaves
Turmeric powder
Salt
Oil
Urad dal
Channa dal
Coriander leaves.

Method

Heat heavy bottomed kadai add 1 tbsp ghee and 2 tbsps of oil.
Add mustard seeds , urad dal, channa dal one by one.
Now add chopped onions, green chillies, ginger and stir well.
Put chopped tomatoes,salt and let it fry for 2 mins.
Add the chopped vegetables and let it cook.
Add 2 1/2 cups of water,turmeric powder,cooked green gram dal and allow the water to boil.
When the water is boiling put roasted rava slowly and keep stiring continiously and cook till done.
Mix everything well and finally add the remaining 1 tbsp ghee.
Garnish with coriander leaves, curry leaves and fried cashewnuts.
Serve hot with coconut chutney.

Pumpkin Skin Thogayal / Chutney

Ingredients

Fresh & tender pumpkin( yellow) skin : 1 cup
Grated coconut                      : 1/2 cup
Red chilly                              : 4
Tamarind                               1/3 of the lemon size
Urad dal                                : 1 tbsp
Channa dal                            : 1 tsp
Salt
Oil

Method

Heat 2 tsp of oil fry channa dal and  urad dal .
Fry till they golden brown.
Then add tamarind and red chilly and saute for 2 mins and keep aside.
Again heat 2 tsp of oil and fry pumpkin peels with salt till the raw smell goes.
Grind sauted pumpkin and dal mixture with grated coconut. ( if necessary add less water to grind)
Serve with hot rice or idly or dosa..

Potato Bonda

 
This is my Dad's Favourite Snack.. I lost my dad when i was 7 years old.. I Miss My Dad So much Every day..

Ingredients For filling

Boiled potato    : 4
Chopped onion : 1 cup
Green chilly       : 4
Chopped ginger  : 1/2 tsp
Mustard
Turmeric powder
Oil
Salt
Curry leaves

Ingredients For the Batter

Gram flour    : 1 cup
Rice flour      : 2 tsp
Corn flour     : 1 tbsp
Red chilly powder : 1 tsp
Turmeric powder 
Asafotida
Salt

Method

Mix the batter ingredients to a thick paste with required amount of  water and keep aside.
Heat oil in kadai, add mustard, chopped green chillies,ginger,chopped onions, curry leaves and stir well.
Add mashed potatoes,turmeric powder, salt and mix well.
Saute them well for 5 mins and let it cool.
Heat oil in a kadai.
Make small balls from potato mixture ,dip it into the batter and deep fry them..
Serve hot with any chutneys.

Palak Paneer ( simple method)

Ingredients

Washed & chopped spinach    : 3 cups
Cubed paneer                          : 1 cup
Onion pureed                           : 1 cup
Tomatoes pureed                      : 1 cup
Ginger - garlic paste                  : 1 tsp
Green chilly                               : 1
Red chilly powder                     : 1 tbsp
COriander powder                    : 1 tbsp
Garam masala powder               : 1 tsp
Cinaamon
cardamom
Cloves
Salt
Oil

Method

Grind spinach and green chilly and keep aside.
Deep fry paneer cubes ,and put it in lukewarm water and keep aside.
Heat oil in a kadai ,add cinnamon,cardamom ,cloves and stir.
Add pureed onion and fry well.
Then add pureed tomatoes and ginger-garlic paste and fry till oil separates.
Now add pureed spinach and cook for 5 mins till the raw smell goes.
Add red chilly powder, garam masala powder , coriander powder, salt and mix well.
let it cook for 5 mins.
Add paneer and mix gently.
Garnish with coriander leaves.

Kadalai parupu mango thuval

Ingredients

Kadalai parupu ( chana dal)  : 1 cup ( it should be soft but not mushy)
Chopped raw mango            : 1/4 cup
Red chilly                            : 2
Chopped onion                    : 1/4 cup
Chopped tomatoes               : 1/4 cup
Red chilly powder                 : 1 tsp
Coriander powder                 : 1 tsp
Turmeric powder
Salt
Curry leaves
Oil
Mustard

Method

Heat a kadai add 2 tsp oil.
Add mustard, chopped onion, red chillies, curry leaves and stir well.
Add chopped tomatoes and stir well.
Now add salt, red chilly powder , coriander powder and turmeric powder and mix well.
Add the cooked dal and stir.
Finally add chopped mangoes and cook for 3 mins.
Garnish with coriander leaves.

Mixed vegetable skin pakora ( pakoda)

Ingredients

Mixed vegetables skin   : 1 cup ( i used ridge gourd, carrot, potato and cucumber peels)
( here i used orange peels also for a slight sour&bitter taste.) 
Besan flour                 : 1 cup
Rice flour                   : 1 cup
Maida                        : 1/4 cup
Red chilly powder      : 1 tbsp
Turmeric powder       : 1/2 tsp
Asafotida                   : a pinch
Salt
Oil

Method

Take a bowl mix all the ingredients ( except oil) with little water .
Make sure the batter should not be too watery.
Keep the batter aside for 5 to 10 mins.
Heat oil in a pan ,take some mixture and drop it in oil.
Fry till golden brown.
Garnish with fried curry leaves.
Serve hot with Tea..

Sesame Fingers

Ingredients

Bread  slices  :  2
white sesame seeds : 1/4 cup
Maida            : 1/4 cup
Corn flour     : 1/4 cup
Carrot           : 1/4 cup ( shredded)
Cabbage       : 1/4 cup ( shredded)
Soya sauce   : 1 tbsp
Pepper powder  : 1 tsp
Salt
Oil

Method

In a bowl mix maida,corn flour,carrot,cabbage,soya sauce,pepper powder ,salt and mix well.
Apply this batter on one side of the bread and keep aside.
Sprinkle the sesame (raw) seeds on the top and press slightly.
Heat oil in pan and deep fry the bread one at a time.
Fry till golden brown and cut each slice into fingers.
Serve hot with tomato sauce.

Dosa Upma

Ingredients

Dosas          : 4
Onion ( chopped) : 1
Tomato          : 1
Green chilly    : 1
Red chilly powder : 1 tsp
Turmeric powder
Salt
Oil
Mustard
Curry leaves
Coriander leaves

Method

Roll the dosas and cut into long pieces and keep aside.
Heat oil in a kadai add mustard seeds, green chillies and curry leaves one by one.
Add chopped onions and fry for 2 mins.
Add chopped tomato and stir well.
Now add turmeric powder, red chilly powder, salt and mix well.
Now add dosa pieces and mix well and cook for 5 mins.
Garnish with coriander leaves.

Dahi Bread

Ingredients

Bread Slices                  : 4
Fresh Curd                   : 1 cup
Grated carrot                : 1 cup
Chilly powder               : 1 tbsp
Chat masala                  : 1 tbsp
Ghee                            : 1 tbsp
Salt

Method

Toast the bread slices using ghee ..
Beat the curd with salt.
Take a serving plate , over each bread slice ,pour 3 tbsps of curd and spread it.
Put chilly powder , chat masala powder.
Finally add grated carrot .
Dahi bread is ready.

Chow Chow Skin Tikki

Ingredients

Fresh and tender chow chow skin ( finely chopped) : 1/4 cup
Boiled and peeled potato : 2
Green chillies                  : 2
Onion ( chopped)           : 2 tbsp
Chilly powder                 : 1 tsp
Jeera powder                  : 1/2 tsp
Chopped ginger              : 1/2 tsp
Roasted channa dal powder : 2 tbsp
Salt
Coriander leaves
Oil

Method

Heat a kadai add 1 tsp oil, chopped ginger and chopped green chillies.
Then add chopped chow chow skin .
Add salt to it and saute for 5 mins.
Then remove from fire and let it cool.
Take a bowl add grated potatoes, onion,chilly powder,jeera powder, roasted channa dal powder,salt ,coriander leaves and finally the sauted chow chow skin and mix well and make a smooth dough.
Make a small ball ,flatten it between the palms to make round tikkis.
Heat a tawa drizzle oil on it.
Place the tikkies on it and shallow fry till golden brown .
Then turn to the other side and let it cook.
Serve with tomato sauce.

Baked Potato

Ingredients

Potato     : 1
Onion     : 2 tbsp ( chopped)
Garlic pods  : 2 ( chopped)
Green chilly  : 1
Basil leaves   : 1 tsp
Coriander leaves : 2 tbsp
Pepper powder   : 1tsp
Salt
Shredded Cheese               : 1 tbsp

Method

Preheat oven to 350 degrees F .
Wash the potato and pierce it with a fork.
Rub the potato with oil.
Place it in the pre heated oven and bake for 1 hr.
As soon as the potato is fully cooked ,divide into 2.
Scoop out the inside of the potato and keep the potato skin cups aside.
Mix chopped onion, green chilly,pepper powder , salt, Basil leaves, coriander leaves and garlic pods with the mashed potato.
Fill the potato mixture in the potato skin cups.
Sprinkle shredded cheese over the top and again bake it for 10 mins.
Baked potato is ready..

Eggless Mango & cashew nut Muffins

Ingredients

Maida       : 1 1/2 cup
Sugar       : 3/4 cup
Mango     : 1/2 cup (mashed)
Butter      : 1/3 cup
Cashewnuts  : 1/4 cup ( chopped)
Baking powder  : 1/2 tsp
Baking soda      : 1/4 tsp
Salt                  : a pinch

Method

Preheat oven to 350 degrees F.
In a bowl mix maida, sugar, baking powder, baking soda and salt.
In a another bowl mix mashed mango, butter .
Put the maida mixture and cashewnuts into the mango mixture and mix well.
Lightly grease and dust the muffin cups and pour the batter into them.
Bake for 15 mins until the muffin top are lightly browned.

Ven Pongal



Ingredients

Raw Rice         : 1 cup
Moong dal       : 1/2 cup
Water              : 4 cups
Ghee               : 4 tbsp
Salt
Curry leaves
Cashewnuts

Grind to a Coarse powder

Ginger    : 1 piece
Whole Pepper   : 1 tbsp
Jeera      : 1 1/2 tbsps

Method

Wash rice and dal together and pressure cook with salt.
Wait for morethan 6 whistles and reduce the flame for 5 mins.
Open the pressure cooker and mash the cooked rice well.
Put ginger powder mixture  and curry leaves on the top of the rice.
Heat ghee , fry cashewnuts and pour on to the rice along with the ghee and mix well.
Serve hot with chutney, sambar and Urad dal vada.

Beetroot Rice


Ingredients

Cooked rice   : 1 cup
Grated beetroot  : 3/4 cup
Onion                : 1
Green chilly       : 3
Garam masala powder  : 1 tsp
Mustard
Curry leaves
Cashewnuts
Coriander leaves
Salt
Ghee

Method

Heat ghee in a kadai add mustard and curry leaves.
Now add cashewnuts , chopped green chillies and saute them.
Add chopped onions and fry well
Once onions turns pink colour add grated beetroot to it and fry till raw smell of the beetroot goes.
Add salt and stir well.
Now put garam masala powder and mix well.
Finally add cooked rice and mix well.
Garnish with coriander leaves and serve with any raita.

Raw Banana Chips ( Nenthirangai chips)


Hai friends .. hope all of you doing great.. Today i am with a wonderful snack recipe..

Ingredients

Raw Banana   :  3 nos
Turmeric powder  : 1 tbsp
Salt                      : 1 tbsp
Oil

Method

Dissolve salt and turmeric in  1/2 cup of water and keep aside.
Remove the skin of the raw banana and keep them in cold water.
Heat oil in kadai ( i used regular cooking oil instead of coconut oil)  and  slice the bananas directly into the oil using a slicer.
If it is uneasy for you, slice them seperately and slide into the oil.
Pour 1 tbsp of turmeric - salt mixture into the oil and let it fry till golden brown in colour.
Serve hot..

Coconut Rice ( Thenga Satham)




Ingredients

Cooked Rice : 1 cup
Grated coconut : 3/4 cup
Green chilly : 3
Red chilly : 1
Peanuts : 2 tbsps
Cashew nuts : 1 tbp
Mustard
Urad dal
Channa dal
Curry leaves
Ghee
Salt

Method

Heat ghee in a kadai add mustard, urad dal, channa dal, curry leaves, slitted green chillies, red chilly, peanuts and cashewnuts.
Fry well till the dals get golden brown in colour.
Add grated coconut to it and stir well till coconut gets slight brown colour and add salt to it.
Now add cooked rice and serve with papad..

Honey Roasted Cashewnuts

Ingredients 

Measurement is very important to get the good End Result.

Cashewnuts    : 2 cups
Honey            : 2 tbsps
Water             : 2 tbsps
Sugar              : 1/4 cup
Salt                 : 1 pinch

Method

Slighty roast the cashews in pan or in microwave oven for 1 minute.
Take a broad pan mix honey and water.
Heat honey mixture till starts bubbling and now reduce the flame.
Add roasted cashew and mixwell till dry.
Now add sugar,a pinch of salt and  make sure the stove is in slow flame.
Stir for 3 mins and  switch off the flame .
Let it cool and serve..

Vada Curry



Ingredients

Channa Dal         : 1 cup
Onion                 : 1
Tomato              : 2
Green chilly        : 2
Ginger ( chopped) : 1 tsp
Garlic  ( chopped) : 1 tsp
Garam masala powder  : 1 tsp
Chilly powder              : 1 tbsp ( or as per taste)
Saunf
Bay leaves
Cinnamon
Cardamom
Salt
Oil


Method

Soak channa dal for an hour and grind coarsely with little salt.
Put it in idly steamer and after steaming crumple it and keep aside.
Heat oil in kadai add saunf, cinnamon, cardamom, bay leaves one by one.
Now add chopped onion, ginger, garlic and chopped green chillies.
Then add chopped tomatoes ,salt , garam masala powder, chilly powder and saute well.
Add steamed dal mixture and fry well.
Add 1 cup water and let it boil for 4 mins.
When curry thickens switch off the stove.
Garnish with coriander leaves .
Serve with Idly or dosa or appam

 This is my 100th post. I am really very happy to post today.. This is happened because of you my dear Friends.. Thank you very much  for your continious support & Encouragement.. In this happy moment  here is a Traditional Sweet for you my dear friends .. Come and have it... 

 

Ingredients

Rice       : 1 cup
Milk       : 3 and 1/2 cups
Sugar     : 1  cup
Cardamom 
Cashew
Ghee
Dry Grapes

Method

Wash and soak rice for 10 mins.
Cook rice in milk in a pressure cooker until throughly mashed.
Take sugar in a heavy bottomed pan add 1/4 cup water and wait for 1 string consitency. ( in this method we can use less ghee.)
Then add mashed rice to it and mix well.
Heat 1 tbsp of ghee and fry cashews and then grapes.
Add it to the rice mixture.
Add cardamom powder and mix well.
Serve hot.

Cabbage Pakoda



Ingredients

Chopped cabbage     : 1/2 cup ( here i used red cabbage. can use white also)
Chopped Onion                       : 1
Maida                       : 1 cup
Rice flour                 : 1 tbsp
Curd                        : 2 tbsps
Chopped Green chilly              : 1
Red chilly powder    : 1 tsp
Salt
Oil
Coriander leaves.

Method

Mix all the ingredients together.
Add little water and mix.
The batter should be in pouring consistency. but not very liquid.
Heat oil in kadai, once the oil gets heated, take a spoon and drop the batter  in oil.
Fry till golden brown in colour.
Serve with coconut chutney.

Vegetable Fried Rice




Ingredients

Cooked Rice    : 1 cup
Mixed Chopped Vegetables : 1 cup ( carrot, capsicum, beans, peas, Cabbage , spring onion)
Soya Sauce          : 1 tbsp
Pepper Powder    : 1 tbsp
Garlic                  : 2 pods
Onion chopped finely : 1
Ghee
Salt

Method

Mix soya sauce, salt and pepper powder well and keep aside. 
Heat ghee in a kadai and add onion, chopped garlic and saute well.
Then stir fry all the chopped vegetables.
Take care that vegetables are not over done, they should be crunchy.
Add soya sauce mixture and stir well.
Now add cooked rice and mix well for 2 to 3 mins.
Garnish with spring onion.
Serve with tomato sauce or raita..

Brinjal - Raw Mango Pachadi ( kathirikai - manga pachadi)


Ingredients

Big size Brinjal     : 1
Raw Mando grated    : 1/2 cup
Coconut                : 1 tbsp
Red chilly              : 2
Curry leaves         
Jeera
Mustard
Urad dal
Salt
Asafotida
Oil

Method

Grease the brinjal with oil and cook on open flame, keep turning the brinjal to evenly cook on all sides and remove the skin and keep aside.
Or You can use oven to toast the brinjal.
A perfect cooked brinjal will be very easy to peel the skin.
Heat oil in a kadai add jeera, 1/2 of the curry leaves and coconut for just 2 mins.
Grind the fried coconut mixture ,grated Raw mango and brinjal with salt.
Again heat oil in pan add mustard, urad dal, curry leaves and asafotida one by one..
Mix the seasoning with the pachadi.
Serve with Plain white rice or dosa..

Vegetable Burger


Ingredients

Burger Bun    : 1
Butter            : 1 tbsp
Vegetable pieces (sliced)   : 1/2 cup ( cucumber, onion, tomato and lettuce )
Vegetable Cutlet    : 1( cutlet recipe Here)
Cheese slice          : 1
Pepper Powder     : 1tsp
Salt

Method

Slit bun into 2 and spread butter  and toast in a Tawa and keep aside.
Take one halt of the bun , in the toasted side put lettuce and then arrange chopped vegetables . ( here as i don't have lettuce , i used red cabbage)
Put pepper powder and salt.
Put cheese slice now.
Place the cutlet and again vegetables and cover with the another toasted bun.
Serve with Tomato sauce.

Simple Potato Sabzi


Ingredients

Boiled Potato     : 3
Onion                : 1
Tomato             : 1
Green  chilly      : 1
Red chilly powder   : 1 tbsp
Ginger - Garlic paste   : 1 tsp
Curd ( yogurt )    : 1/4 cup
Coriander Powder  : 1 tsp
Garam masala powder  : 1 tsp
Cinnamon
Cloves
Coriander leaves
Salt
Oil

Method

Mix chilly powder, garam masala powder, coriander powder, ginger- garlic paste, salt , green chilly, chopped tomatoes with curd .
Add boiled and cubed potatoes with that curd mixture and keep aside for 1/2 an hour.
Heat oil in a kadai and add cloves, cinnamon and chopped onions to it.
Saute well.
Then add curd mixture to it.
let them cook for 5 mins till oil separates .
Garnish with Coriander leaves and serve with Roti or Naan
