750th Post - Apple Jalebi
750 it is !!
Ingredients
Apple : 1
Maida / All purpose flour : 1 tbsp
Corn flour : 1 tbsp
Butter : 1tsp
Baking soda : a pinch
Sugar : 1tbsp
Salt : a pinch
Saffron : 10 threads
Oil
Almonds
For Sugar syrup
Sugar : 1 cup
Water : 3/4 to 1 cup
Cardamom powder
For garnishing
Pista : 2 tbsps
Almonds : 2 tbsps
Method
Take maida , corn flour , salt , baking soda in a bowl and mix well.
Add water , mix without lumps, make a thick and smooth batter.
Soak saffron in little water for few minutes.
For the sugar syrup ,combine 1 cup sugar, 1 cup water, safforn water in a kadai and boil on low flame for 10 minutes or until the syrup is slightly thick and sticky and keep aside.
Add cardamom powder to the syrup and mix well.
Peel the apple , slice it into thin round slice and remove the seeds.( scoop out the seeds)
Heat oil in a kadai , dip one apple slice in maida batter and deep fry them till golden brown colour.
Drain and keep aside.
Place the apple jalebis in sugar syrup , soak for 2 minutes and transfer it to a serving plate.
Garnish with sliced almonds and pistachio and serve immediately..
Aravanai Payasam / Nei payasam / அரவணை பாயசம்
Ingredients
Raw rice : 1/4 cup
Jaggery : 3/4 cup
Coconut pieces : 1 1/2 tbsp
Ghee : 3 tbsps
Nutmeg powder : a pinch
Dry ginger powder : a pinch
Method
Wash and soak rice in water for 10 minutes.
Strain and pressure cook the rice with 3/4 of water for 4 whistles.
Powder the jaggery ,add 1 1/2 cups of water and bring it to a boil.
Strain it for impurities.
Heat a heavy bottom pan ,add jaggery water and let it boil on medium flame till it becomes thick .
Add the cooked rice to the jaggery syrup , mix well.
Add 1 tbsp ghee and let it boil on low flame for 5 minutes.
Add , nutmeg powder , dry ginger powder , 1 tbsp ghee and mix well.
When the payasam starts leaving the sides , switch off the flame.
Heat 1 tbsp ghee , fry coconut pieces till golden brown and add it the payasam , mix well .
Serve hot

Vella pidi kozhukattai / வெல்ல பிடி கொழுக்கட்டை / Sweet pidi kozhukattai
Ingredients
Rice flour. : 1 cup
Jaggery. : 3/4 cup
Water. : 1 cup
Grated coconut. : 1/4 cup
Cardamom powder. : a pinch
Ghee. : 1 tbsp
Method
Dissolve jaggery in water and heat .
Strain and heat again.
Add grated coconut , cardamom powder , ghee and mix.
Once it boils , simmer and add rice flour slowly and mix well till it forms a thick dough.
Remove from flame and let it cool.
Apply little oil / ghee in your palm , take a small lemon size dough and make a ball.
Just press it by your fingers .
Grease idli plate with oil , steam cook the kozhukattai fot 10 minutes.
Serve hot..
Maa Vilakku / மாவிளக்கு மாவு
Ingredients
Raw rice : 1cup
Jaggery : 3/4 cup
Cardamom : 2
Ghee : 2 tsp
Method
Wash and soak raw rice for 15 minutes
Drain the water and spread in a clean cloth till the rice becomes dry.
Powder it in a mixie with cardamom.
Add grated jaggery to it and grind it for just few seconds.
Transfer it to a plate , mix well .
Roll it like a ball , slightly press in the middle , add ghee and place cotton wick ( Vilakku Thiri )
Lit the lamp and offer it to the God.
700th Post - Thirattupaal / Thirattupal / திரட்டுப்பால்
A special traditional recipe to celebrate my 700th Post...
Ingredients
Milk : 2 ltrs
Jaggery : 1 1/2 cup
Cardamom powder : a pinch
Method
Boil milk in a heavy bottomed pan.
Keep stirring with a wooden spoon.
Reduce the flame to low and add powdered jaggery.
Keep stirring for some more time until it becomes very thick.
Add cardamom powder and mix well.
Remove from flame and let it cool.
Store it in an air tight container.
Enjoy..

Vegetable Payasam
Ingredients
Carrot : 3
Potato : 1 ( small)
Chopped cabbage : 1/2 cup
Milk : 3 cups
Sugar : 3/4 cup
Cardamom powder : 1/4 tsp
Method
Pressure cook the vegetales in 3/4 cup milk for 4 whistles and let it cool.
Puree the cooked vegetables .
Heat the remaining milk , add the mixture , mix well and let it boil on low flame.
Add cardamom powder, sugar and mix well.
Boil till the payasam thickens.
Remove from flame and serve hot.

Kaju Badam Katli / முந்திரி பாதாம் பர்பி
Ingredients
Cashewnuts coarsely ground : 1/2 cup
Badam Coarsely ground : 1/2 cup
Sugar : 1 cup
Water : 1 /4 cup
Method
Heat water,sugar in a heavy bottomed pan.
Let it boil for 5 minutes .
Let it boil for 5 minutes .
Put cashew powder,badam powder to it and stir well
Cook for few minutes till the mixture thickens.
Switch off the flame and let it cool.
Knead well with your hands to make it smooth.
Cook for few minutes till the mixture thickens.

Roll out with a rolling pin and cut into Diamond shape.
Serve....
Rose Petals Peda
Ingredients
Crumbled paneer : 2 cups
Condensed milk : 1 cup
Rose petals : 1/2 cup
Almonds to garnish
Method
In a deep frying pan , add paneer and let it cook for 5 minutes.
Add condensed milk, rose petals now and cook for 20 to 25 minutes.
Continue this till the mixture starts leaving the pan.
Remove from flame and let it cool .
Shape into round balls and garnish with almonds.
Serve.
Almond Katli recipe / Almond Burfi recipe / Badam Katli
Ingredients
Almonds : 1 cup
Sugar : 3/4 cup
Method
Soak almonds in water for 2 hours.
Remove the skin .
Grind into a smooth paste.
Heat water and sugar in a heavy bottomed pan.
Let it boil for 5 mins ( no need to check for stiring consistency)
Add the almond paste now and stir well .
Cook for few mins till the mixture thickens.
Switch off the flame and let it cool slightly.
Grease your hands with little ghee , knead well to make it smooth.
Place it over butter paper , roll out with a rolling pin and cut into shape.
Store at room temperature .

Sesame seeds balls ( Laddu) / Ellu Urundai / எள்ளு உருண்டை
Ingredients
White sesame seeds ; 1 cup
Jaggery : 3/4 cup
Method
Dry roast sesame seeds till they pop up.
Remove from flame and let it cool.
Heat a pan ,lower the flame, add powdered jaggery and 1/4 cup water .
Strain it and boil again till soft ball consistency.
Now add the roasted sesame seeds to it, mix well and remove from flame.
Grease the hand with ghee / rice flour and make balls.
Let them cool completely and store it in an air tight container.
