Sabudana Khichidi / ஜவ்வரிசி உப்புமா






Ingredients

Sabudana              : 1 cup
Boilded poato       : 1
Green chilly          : 3
peanuts                  : 2 tbsps
Ghee                      : 1 1/2 tbsp
Cumin seeds          : 1 tsp
Lemon juice           : 1 tsp
Salt


Method

Wash and soak sabudana in water for 2 hours.
Drain in a colander.
Roast peanuts , peel the skin and powder it coarsely.
Heat ghee in a pan , add cumin seeds, green chillies and fry.
Add chopped potato and mix.
Add drained sabudana , salt and mix everything well.
Reduce the flame, add peanuts powder and mix.
Let it cook for few minutes
Remove from flame , add lemon juce , mix .
Serve hot.



Brinjal Thokku / கத்திரிக்காய் தொக்கு



Ingredients

Brinjal                              : 1 (big)
Chopped onion                : 1/2  cup
Chopped tomato              : 1/4 cup
Ginger - Garlic paste       : 1 tbsp
Red chilly powder           : 1 1/4tsp
Coriander powder            : 1 tsp
Garam masala powder     : 3/4 tsp
Green chilly                     : 1
Turmeric powder
 Salt
Mustard seeds
Fenugreek seeds
Coriander leaves
Oil


Method

Heat 3 tbsp gingely oil in a cooker , add mustard seeds , fenugreek seeds and fry.
Add chopped onion , 1 green chilly and fry.
Add ginger garlic paste , tomatoes and fry.
Add turmeric powder, red chilly powder , coriander powder , salt and mix everything well.
Now add garam masala powder ,chopped brinjal and mix.
Cover the pressure cooker , cook for 2 whistles on medium flame and remove from flame.
Let it cool.
Open the cooker ,mix , saute for few more minutes to thicken the thokku.
Garnish with coriander leaves , remove from fire .
Serve hot with poori / Chapathi..

Aloo Poha / Batata Poha



Ingredients

Poha                                              : 2 cups
Cooked and peeled potato cubes  : 1/2 cup
Frozen Green peas                        : 1/4 cup
Chopped onion                              : 1/4 cup
lemon juice                                   : 1 tsp
Turmeric powder                           : 1/4 tsp
Green chillies                                : 2
Grated ginger                                :  a pinch
Curry leaves
Mustard seeds
Oil
Salt


Method

Place the poha in a sieve , wash it in running water,  drain and keep aside.
Heat oil in a pan , add mustard seeds.
When they crackle ,add onion , chopped green chillies ,  curry leaves and fry.
Add turmeric powder , green peas, cubed potatoes , mix and cook on low flame.
Now add washed and drained poha to it and mix everything well.
Add 2 tbsp water , mix and cook.
Finally add lemon juice , mix and remove from flame.
Serve hot



Maravalli Kizhangu Adai / மரவள்ளி கிழங்கு அடை



Ingredients

Peeled & chopped tapioca   : 2 cups
Idli rice                                : 1 cup
Toor dal                               : 1/4 cup
Urad dal skinned                 : 1/4 cup
Green Moong dal                : 1/4 cup
Red chilly                            : 4nos
Green chilly                         : 2 nos
Black pepper                        : 1/4 tsp
Currly leaves
Salt
Asafoetida
Oil



Method

Wash & soak rice and dal together for 2 hours.
Grind soaked rice - dal mixture, red chillies , green chillies , pepper and salt coarsely.
Now add finely chopped tapioca and grind for few more minutes.
The batter should be thick .
Add curry leaves , asafoetida and mix well.
Heat dosa tawa, pour 1 ladle of batter and spread as round.
Put oil on sides and cook both sides till crispy. 
Serve hot with Avial ..

Wheat rava upma kozhukattai / Broken wheat upma kozhukattai / Godhumai rava pidi kozhukattai / கோதுமை ரவை பிடி கொழுக்கட்டை



Ingredients 

Broken wheat           : 1 cup
Water                        : 2 cups
Grated coconut         : 1/4 cup
Red chilly                 : 2 
Green chilly              : 2
Curry leaves
Mustard seeds
Asafoetida
Oil 
Salt


Method

Dry roast broken wheat for few minutes , remove from pan and let it cool.
Heat oil in a pan, add mustard seeds ,then broken red chillies,green chillies,curry leaves,asafoetida one by one.
Add water,salt and let it boil.
When water just comes to a boil,put wheat rava (  broken wheat )  and coconut , mix well ,lower the flame and let it cook until the water evaporates.
Switch off the flame.
Spread the mixture on a plate and let it cool.
Take about 2 tbsps of the rava mixture,roll it into a cylindrical shape and steam it for 10 minutes.
Serve with kothasu or Sambar 


Pasta in white sauce



Ingredients

Pasta                         :  1 cup
Butter                       :  2 tbsp
Refined flour            :  1 1/2 tbsp
Milk                          :  1 1/4 cup
Oregano                    : 1/4 tsp
Pepper                       : 1/2 tsp
Basil leaves 
Salt



Method

Boil pasta in enough water with little salt.
Drain it and add 1/4 tsp olive oil to the pasta to keep it from sticking. 
Heat a pan , melt butter over low flame.
Add refined flour , salt into the butter and fry for few minutes on low flame.
Slowly add milk , stirring continuously.
Continue cooking until smooth and thicked.
Add cooked pasta ,crushed pepper and mix.
Add little water and mix.
Add oregano , basil leaves and give a good mix.
Remove from flame and serve hot.



Bengali Luchi / Bengali Puri



Ingredients

Maida                    : 1 cup
Ghee                     : 1 tbsp
Salt
Oil


Method

Take a wide bowl , add maida , ghee , salt and mix well.
Knead into a soft dough using enough warm water.
Cover with a cloth and keep aside for 1/2 an hour.
Knead the dough once again , make small balls, roll out into small circles.
Heat oil in a kadai , fry the poori till golden brown.
Serve hot ..

Vegetable Macaroni



Ingredients

Macaroni                            : 2 cups
Grated cabbage                  : 1 cup
Chopped carrot                  : 1/2 cup
Chopped onion                  : 1/4 cup
Green peas                         : 1/4 cup
White pepper powder         : 1/2 tsp
Soya sauce                         : 1 tbsp
Chopped garlic                  : 1 tbsp
Spring onion                      : 2 tbsps
Salt
Oil

Method



Boil 4 cups water in a wide pan.Add macaroni and salt into the boiling water and cook for 10 minutes.



keep stirring constantly..




Strain it and run cold water over the macaroni to cool it completely


Heat oil in a pan , add chopped garlic and fry.

Add chopped onion ,



Cabbage, 



Carrot ,

green peas, 



and mix everything well.


Add soya sauce,



salt and mix well.

Add macaroni now and mix.


Add white pepper powder and mix.


Finally add chopped spring onion , mix well and cook for few minutes.



Now hot vegetable macaroni is ready... Enjoy


Rava Masala Dosa / ரவா மசாலா தோசை



Ingredients for Rava dosa 

Rava : 1 cup
Rice flour : 1 cup
Maida : 1/2 cup
Grated ginger : 1/2 tsp
Chopped onion : 1/2 cup
Chopped coconuts : 2 tbsps
Chopped green chillies : 1 tbsp
Cunin seeds : 1 tbsp
Pepper corns : 1 tsp
Coriander leaves
Curry leaves
Salt
oil


Mix all the ingredients well except oil and keep aside for 20 minutes.
 
Ingredients for the potato filling 

Boiled & Mashed potato : 3 nos
Cooked green peas : 2 tbsps
Chopped onion : 1/2 cup
Green chillies : 3
Mustard
Salt
Oil
Grated ginger : 1/4 tsp
Coriander leaves

Method

Heat oil in a pan,add mustard seeds and allow them to pop.
Add chopped green chillies,grated ginger and onion,turmeric powder,fry till onions are slightly golden in colour.
Add potato, salt,green peas and mix everything well.
Cook for 5 minutes,add coriander leaves and keep aside.

Heat a non stick pan, rub some oil , drizzle a ladle of batter on to the hot tawa.
Pour some oil around the corners, let it cook till the edges turn brown.
Flip over and let the other side cook.
Spread 2 tbsps of potato filling and fold the dosa .
Now the dosa is ready to be served...
Serve hot with Chutney & Sambar....
 




Pav Bhaji Dosa / Pav Bhaji Masala Dosa recipe




Ingredients

Dosa Batter                           : 1 cup
Peeled and cubed potato        : 1 
Chopped carrot                      : 1/2 cup
Chopped onion                       : 1/2 cup
Chopped tomatoes                 : 1/2 cup
Green chillies                         : 2
Ginger - garlic paste                : 1 tbsp
Pav bhaji masala                    : 1 tbsp
Chilly powder                          : 1 tbsp
Lemon juice                            : 1 tbsp

Butter                                    : 1 tspSalt 
Oil
Turmeric powder
Coriander leaves 







Method

Add a tsp of oil in a pressure cooker ,add chopped onions,chopped green chillies and fry.
Add ginger - garlic paste and fry well.
To this add chopped tomatoes, salt, turmeric powder, pav bhaji masala, chilli powder and stir well for few mins.
Now add cubed potato, carrot, and mix well.
Close the lid and pressure cook till 3 whistles.
When it is cooled open and add coriander leaves ,butter, lemon juice and mash .( don't make it into paste.)


Heat a dosa tawa , pour a laddle full of batter in the middle , spread in a circular motion , pour 1 tbsp oil , cover it with a lid and let it cook on medium flame.
Open the lid , spread 3 tbsps of pav bhaji masala .
Fold the dosa and remove from tawa..
Serve hot.
