Pal Poli ( Milk Poli)

 


Ingredients

Maida       : 1 cup
Milk         : 3 cups
Sugar      : 1 cup
Cashewnuts  : 10
Cardamom
saffron
Oil
Salt     : a pinch

Method

Knead maida with a pinch of salt into a dough and keep aside for 1/2 an hour.
Roll out like a thin poori and deep fry in oil.
Grind Cahewnuts and cardamon to a coarse powder.
Boil milk and when reduced to half of the volume add sugar,saffron, cashew-cardamom mixture to it and continue to boil slowly.
Remove milk from flame and add poori one by one and let it soak well.
Remove the polis from milk and store it seperately as soaked polis tend to stick together.
Serve hot or chilled..

Spring Roll with Homemade Wrapper

Ingredients For Wrapper

Maida    : 1 cup
Salt
Water  : 1 cup

Method

Mix all the ingredients throughly without any lumps and keep aside for 1/2 an hour.
The mixture should be in liquid consistency.
Heat a non-stick kadai ( for best result use appam kadai)
Pour a laddle of batter and suddenly swirl in around to make very thin wrapper.
You can see the air pockets forming under the wrapper.
No need to cover the kadai.
When the edges of the wrapper curled up away from the pan , take it out  and let it cool.

Ingredients for the filling

Mixed vegetables           : 1 cup ( i used carrot, cabbage , peas , onion and tomato)
Chilly powder                : 1 tsp
Coriander powder          : 1 tsp
Garam masala powder    : 1/2 tsp
Green chillies
Oil
Salt
Coriander leaves

Method

Heat a pan and add 1 tbsp oil .
Put onion and green chilly and fry well.
Then add tomato to it and mix well.
Now the vegetables and stir well and add salt to it.
Add all the masalas and mix.
Cook for 5 mins and garnish with coriander leaves.

Method of spring Roll

Take a wrapper and fill 11/2 tbsp of vegetable mixture .
Fold it and deep fry in oil.
Serve hot with tomato sauce.

Rice Kitchadi ( Gujarati Special)


Ingredients

Rice     : 1 cup
Green Gram Dal    : 3/4 cup
Jeera              :  1 tbsp
Ghee             : 2tbsp
Asafotida      : 1/2 tsp
Turmeric powder
Salt

Method

Soak the green gram dal for 2 hrs for best results.
Wash both the rice and dal .
Heat ghee in a pressure cooker .
Add jeera and asafotida and stir till jeera starts to pop.
To this add 4 to 41/2 cups of water , turmeric powder ,salt and mix well.
Close the pressure cooker lid and wait for 5 whistles.
Open the cooker when it is done and serve with kadhi.
Kitchadi and kadhi is the ultimate combination .

Kadappa ( Tanjore Special)


Ingredients

Cooked moong dal  : 1 cup
Onion                      : 1
Tomato                   : 2
Green chillies           : 4
Lemon juice            : 1 tbsp
Garlic                     : just 1 pod
Coconut Milk         : 1/2 cup
Cinnamon              : 1 stick
Coriander leaves
Salt
Oil

Method

Heat oil in a pan , put cinnamon stick and onions.
Add green chillies, tomatoes and garlic and fry well.
Cook till oil seperates and add salt to it.
Now add mashed moong dal and cook for few mins.
Finally add coconut milk .
Switch off the flame and add lemon juice and garnish with coriander leaves.

Vegetarian Nargisi Kofta

Originally Nargisi kofta is made of Eggs . Here instead of egg i used potato and paneer kofta in Egg shape.

Ingredients

Boiled Potato     : 3 nos
Paneer    : 100 gmas
Onion     : 2
Tomato  : 3
Ginger - garlic paste  : 1 tbsp
 Chilly powder   : 1 tbsp
Coriander powder : 1 tbsp
Garam masala powder : 1 tbsp
Bread slices     : 2 
Red food colour : a pinch
Bay leaves
cinnamon
Cardamom
Oil
Salt

Method

Mash the potatos and grate the paneer
Puree the onion and tomato separately.
Divide the paneer into 2 portion.
Put red colour in one portion and make balls and cover that balls with white portion of paneer. Make balls.
Dip bread slices in water and squeeze and keep aside.
With that soaked bread add potato, salt and chilly powder and mix well.
Cover the paneer balls with potato mixture and shape like egg.
Now there is 3 layers in kofta.
Deep fry the koftas in oil and keep aside.
Put oil in a pan add bay leaves, cinnamon and cardamom.
Then add onion paste, ginger -garlic paste.
Fry well.
Now put tomato puree, chilly powder, garam masala powder, coriander powder and salt.
Fry well till oil seperates.
Switch off the fire and add koftas before serving.

Tomato Pulao


Ingredients

Cooked Rice       - 1 cup
Tomatoes  - 5
Onion       - 2
Green chillies  - 4
Ginger- garlic paste  - 1 tbsp
Mint leaves
Coriander leaves
Cinnamon
Cardamom
Cloves
Bayleaves
Oil

Method

Heat oil in a pan add Cinnamon, cardamom, bayleaves and cloves one by one.
Then add chopped onions and fry well till onion turns brown in colour.
Then the green chillies,ginger - garlic paste, tomatoes and add salt to it.
Fry for 5 mins.
Add cooked rice and mix well.
Garnish with coriander leaves and mint leaves.
Serve with raita.

Mint - Lemon Juice

Ingredients

Fresh Mint leaves   : handful
Lemon juice           : 2 tbsp
Honey                   : 2 tbsp


Method

Add mint leaves , lemon juice and honey to a blender . Blend it
Add required water and ice cubes.
Blend some more.
Drink and enjoy.

Paneer Sandwich





Ingredients

Paneer          : 100gms ( cubed)
Bread slices  : 10
Onions         :1
Capsicum     : 1
Tomato sauce  : 2tbsp
Pepper powder : 1tsp
Butter               : 2 tbsp
Salt
OIL

Method

Put oil in a pan and fry chopped onions , chopped capsicum and panner.
Add salt and pepper to it.
Now add tomato sauce and mix well.
Keep aside.
Apply butter to one side of a bread and place  2 spoons of paneer mixture and cover it with another bread.
Toast it in a sandwich maker.
Serve hot.

Fruit Skewers


Ingredients

 Fruits         : 1 cup ( papaya, banana, guava, orange and grapes)
 Honey        : 2 tbsp

Method

Wash and cut the fruits into bite size pieces.
Take a tooth pick and arrange the fruits one by one.
Arrange the skewers on a plate and drizzle honey on it and serve for your kid's party.

Channa Masala

Ingredients

Channa          : 1 cup ( soaked overnight and cooked)
Onion            : 2 ( pureed)
Tomatoes      : 3 ( pureed)
Ginger - garlic paste : 1 tbsp
Chilli powder  : 1 tsp
Coriander powder  : 1 tsp
Garam masala powder : 1 tsp
Turmeric powder     : 1/4 tsp
Jeera                       : 1/4 tsp
Oil
Salt
Coriander leaves

Method

Heat oil in a kadai put jeera .
Then add pureed onion and pureed tomato and ginger- garlic paste and fry well.
Add salt and 1/4 tsp of sugar and mix well.
Now add the dry masalas one by one.
Mix well and let it fry for 5 mins in oil.
Now add the cooked channa to the masala.
Slightly smash the channa and add coriander leaves.
Serve with channa battura.

Channa Batura


 
Ingredients

Maida         : 1 cup
Curd          : 1/4 cup
Salt            : to taste
Sugar        : 1 pinch
Oil

Method


Mix maida,curd, salt and sugar and make a dough.

Keep aside the dough for 2 hours.

Round even sized balls.Flatten the balls to puri

Deep fry this in oil till the poori pops fully and then remove it from the frying pan.

Serve with channa masala.

Rava Bonda

 



Ingredients

Rava          : 1/2 cup
Idly mavu (batter)  : 3/4 cup
Onions             : 1 chopped
Green chillies    : 3
coriander leaves
Salt
oil

Method

Mix rava, idly flour, salt, onions, coriander leaves without water.
Heat oil.
Take a ball  and deep fry it
Remove from the frying pan after the balls become golden in colour.

Serve with coconut chutney.

Dal Fry

 


Ingredients

1 cup  moong dal


1cup  Masoor dal
1 cup Chopped onion

1 cup Tomatoes  (chopped)

4 tsp Garlic chopped

2 tsp Ginger (chopped)

1 tsp Green chillies (chopped)

1 tsp garam masala

Red chilly powder

Turmeric powder

Coriander powder

Cumin seeds(Jeera)

Salt to taste

Ghee

Method
 
Put ghee in a cooker add jeera, onion till turns brown.
Then add tomatoes, garlic, ginger , green chillies and all spices.
Now add both dals to it.
Add required water and salt
Close the lidof the cooker .
After 4 whistles switch off the fire.
Serve hot with jeera rice and roti.

Papaya Halwa


Ingredients

Papaya pulp           : 1 cup
Sugar                     : 1/2 cup
Ghee                     : 1 tbsp

Method

Cook papaya on low heat till very soft.
Add sugar and continue to cook till it begins to leave the sides.
Add ghee and mix well.
Serve hot or cold.
